How cute are these Rudolph Millionaire Shortbread! These are the perfect festive treat and they are so easy to make.

I can’t believe this is my first Christmas recipe, how has it taken me this long to post?! Anyway, it is here now, and hopefully, it was worth the wait.

What is Millionaire Shortbread?

Millionaire Shortbread was adapted from the original Scottish shortbread. The practice of adding additional toppings to traditional shortbread to create unique variations dates back to the 19th century when candied orange peel and almonds were added.

It is unknown when the first combination of the shortbread and caramel first appeared or was popularised. Combinations of shortbread with a caramel topping date to at least the early 1950s.

Before you Start

Before you start baking, line your cake tin with baking parchment. Remember and line the bottom and sides because you don’t want the shortbread, caramel or chocolate sticking to the sides.

Also, preheating the oven, is so important. This just ensures that the oven is at the correct temperature, so when the shortbread is ready you can pop it straight into the oven. It also means that the shortbread will cook at the correct temperature and speed.

Making the Shortbread

To make the shortbread base you only need three ingredients. Flour, Sugar and Butter. I have based this recipe on my Jammie Dodger Millionaire Shortbread. To make the shortbread mix the three ingredients together until a soft dough is formed. Press this into the bottom of your cake tin and bake in the oven for 20-25 minutes or until golden brown in colour.

Making the Caramel

Once your shortbread has baked remove it from the oven and leave it to one side. It doesn’t need to be completely cool before you start making the caramel Normally, I start making the caramel as soon as it comes out of the oven.

Add all the ingredients to a large saucepan and melt on a low/medium heat. Stirring continuously, until the ingredients are completely combined, and the sugar has dissolved.

Once the sugar has dissolved turn the heat up and stir continuously. The caramel will start boiling but keep stirring for around 4-6 minutes. The caramel will turn a lot more golden in colour and a lot thicker.

You need to stir it constantly. If not, it might end up catching and burning. Once the caramel is thick and golden pour it on top of your shortbread, and pop it into the fridge until it has set.

Chocolate Topping

Once the caramel has set, melt the chocolate in the microwave on 20-second bursts. Stirring in between each burst until it is completely smooth. Pour this over the top of your caramel and put it back in the fridge to set. I would recommend leaving a small amount of chocolate over to help you stick Rudolph’s nose and eyes on once the chocolate has set.

Decorations

Once your chocolate has set cut the millionaire shortbread into individual portions. Place the red M&M nose, and edible eyes as well as the pretzel antlers onto the millionaire shortbread. Once you have them in place use the leftover chocolate to stick them in place.

For the decoration, you could use Smarties instead of M&Ms for Rudolph’s nose. I used pretzels cut in half for the antlers.

Alternatives

I used milk chocolate for the topping but if you prefer you could use white or dark chocolate instead.

Rudolph Millionaire Shortbread

Ingredients

For the Shortbread

  • 75 g Caster Sugar
  • 175 g Unsalted Butter or Stork
  • 275 g Plain Flour

For the Caramel

  • 397 g Condesned Milk
  • 50 g Caster Sugar
  • 75 g Golden Syrup
  • 225 g Unsalted Butter

For the Topping

  • 300 g Milk Chocolate

Decoration

  • Red M&Ms
  • Pretzels
  • Edible Eyes

Instructions

To Make the Shortbread

  • Line a 8" round cake tin with non-stick baking paper. Preheat the oven to 180C (160C Fan).
  • Add the sugar, butter and flour to a bowl and mix until it forms a soft dough.
  • Press the dough into the bottom of your lined tin until it is flat and even.
  • Bake for 20-25 minutes or until golden.
  • Remove from the oven and leave to one side.

To Make the Caramel

  • To make the caramel put the condensed milk, sugar, golden syrup and butter into a large pan over a low heat.
  • Stir continually until the sugar has dissolve and the butter has melted. Turn the heat up to medium and boil until the caramel has thickened and darkened in colour. Stir continuously to ensure the caramel doesn’t burn.
  • Once the caramel is nice and thick it should take between 5-8 minutes pour it over the top of your shortbread biscuit and leave to cool.
  • Put it in the fridge until the caramel had cooled and set.

To Make the Topping

  • Add the chocolate to a heatproof bowl and melt in 20 second bursts stirring in between until it is smooth and completely melted.
  • Pour it over your caramel.
  • Pop the Millionaire Shortbread back into the fridge until the chocolate has set.

To Decorate

  • Once the chocolate topping has set, remove from the cake tin and cut into individual slices.
  • Use any leftover chocolate to stick the red M&M noses on, the edible eyes, and the pretzels in place.
