This Twix Rocky Road is the perfect no-bake treat. It is packed full of marshmallows, biscuits, Twix and little hidden pockets of caramel.  

I don’t know about you, but I think Twix is such an underrated chocolate bar and I can never resist a White Chocolate Twix too.  

Rocky Road is such an easy recipe to make, especially in a heatwave, no cooking or ovens are required!

How to Make This Twix Rocky Road  

Rocky Road is so quick and easy to make. I made this using milk chocolate which I melted in the microwave in 20-second bursts stirring to make sure it doesn’t burn.  

To the chocolate, I then added mini marshmallows, digestive biscuits and cut-up Twix.  

The beauty of Rocky Road is you can literally add anything you fancy. There are no exact rules to Rocky Road, why not add glacé cherries or some nuts?  

In this recipe, I used the mini marshmallows that normally come in a packet of mixed pink and white. They are the perfect size for Rocky Road.  

I used a plain digestive biscuit in this recipe too. I crushed them up in my hands before adding them to the bowl, that way they were lots of different sizes and shapes.

As I mentioned above, I used both white and milk chocolate Twix but you can use just one if you want.  

I cut them up into 2-3 pieces. To be honest, I wasn’t too fussed about making them all the same size. I find one of the great things about Rocky Road is that all the ingredients don’t need to be perfectly cut or the same size or shape.  

In this recipe, I used an 8” square cake tin. This tin is a bit smaller than my usual tin, but I find it makes a lovely and thick piece of Rocky Road.  

I poured half of the mixture into the cake tin and then added heaped spoonfuls of caramel. You could also drizzle it over if you prefer. I used the heaped spoonfuls so that when you bite into the caramel you get lovely little pockets of Caramel.  

Next, I poured the rest of the Rocky Road mixture over the top and again added caramel on top. I then added some leftover marshmallows, biscuits and Twix and popped them into the fridge to set.

Why do they call it Rocky Road? 

Rocky Road, got its name in 1929. William Dreyer chopped up pieces of walnuts and marshmallows and added them to his chocolate ice cream. Later that year there was a stock market crash in the US and he named it Rocky Road “to give folk something to smile about.” 

Can I freeze Rocky Road? 

Yes!!! Once it has set in the fridge, cut it into individual pieces, wrap them in clingfilm or pop them into freezer-safe bags and put them into the freezer. They will last in the freezer for up to 3 months.  

How long can Rocky Road last in the fridge? 

Rocky Road will last around 3 weeks in the fridge. Just store it in an airtight container before you put it into the fridge.  

Alternatives

So the beauty of this recipe is you can add anything you want. Why not add in glace cherries, walnuts, or anything else you can think of?

You could also use white chocolate or dark instead of milk.

Ingredients

For the Twix Rocky Road

  • 100 g Digestive biscuits
  • 100 g Marshmallows
  • 100 g Twix
  • 100 g White Twix
  • 500 g Milk Chocolate
  • 150 g Caramel

Instructions

To Make the Twix Rocky Road

  • Line an 8” square cake tin with parchment paper and leave it to one side.
  • Crush the biscuits and add them to a large bowl with 80g of Marshmallows.
  • Cut your Twix and White Twix's into 2-3 pieces and add to the bowl.
  • Add the chocolate to a separate heatproof bowl and melt in the microwave on 20-second bursts stirring in between until the chocolate has completely melted and is smooth.
  • Pour the chocolate on top of the biscuits, Twix and marshmallows. Stir until they are completely coated in chocolate.
  • Pour half the mixture into your cake tin and smooth.
  • Add the caramel to a bowl and stir to make it slightly softer.
  • Spoon tablespoons of the caramel onto the top of the chocolate mixture. Remember and keep some for the top.
  • Pour the remaining mixture into the tin ensuring that the caramel is completely covered.
  • Add spoonfuls of the caramel onto the top of the mixture.
  • Finish by adding the remaining marshmallows, Twix, and biscuits to the top of the rocky road.
  • Put the Rocky Road in the fridge for 4 hours or until the chocolate has set.
  • Remove from the fridge and cut into individual portions.

Notes

  • This Twix Rocky Road can be stored either in the fridge or in an airtight container and it will last up to 1 week.
