Bounties
I adore Bounties, they are just so coconutty and delicious and one of the chocolate bars I will always pick up if I am in a shop. However, there is a lack of Bounty recipes on my blog. It was about time that I changed that.
I do have plenty of coconut recipes like my Jam and Coconut Traybake and Vegan Coconut and Raspberry Loaf and plenty of other brownie recipes on my blog like my Salted Caramel and Peanut Brownies.

Brownies
Brownies are such a rich and decadent treat. These brownies are packed full of Bounty chunks of desiccated coconut.
To get a rich brownie you need to use Dark Chocolate in the mixture. I know dark chocolate can be quite bitter, don’t worry, it won’t make your brownies taste bitter.
One thing about brownies is that you need to be very careful and gentle with them. You need to whisk the sugar and eggs together until they have doubled in volume. All the remaining ingredients need to be folded through.

If you beat the other ingredients in it will deflate your eggs and sugar mixture. Brownies don’t have any raising agent in them, all of the rise is from the egg mixture. The remaining ingredients need to be folded into the egg and sugar mixture.
Brownies don’t have any raising agent in them which is why the eggs are so important, but also important is the type of flour that you use.
Self-raising flour is a mixture of plain flour and raising agent and you don’t want raising agent anywhere near your brownies or it will give them a cakey texture.

Coconut
I wanted to use as much coconut in this recipe as possible. I used desiccated coconut in this recipe and added it to the brownie mixture as well as chunks of Bounty.
You can use as much or as little coconut as you want in these brownies. You could also use a mixture of desiccated coconut and flaked coconut or toasted coconut.

Baking
These Bounty Brownies should be baked in the oven for 30-35 minutes. Although because every oven is different It can be difficult to tell when your brownies are baked.
You don’t want them to be completely set when they come out of the oven. They need to have a slight wobble in the centre for them to be soft and fudgy.
When you remove the brownies from the oven they should look dry on top and have a slight wobble in the centre for them to be soft and fudgy.
If you overbake your brownies they may be more cake-like and won’t have that gooey, soft centre.
I wouldn’t recommend that you use a cake tester or skewer to test the centre of the brownies you want them it to come out with the batter on. If there is no batter on the end of your skewer or tester then you have overbaked the brownies.

Alternatives
I used desiccated coconut in these brownies as well as Bounty chunks but you could use toasted coconut or coconut flakes instead.

Bounty Brownies
Ingredients
To Make the Bounty Brownies
- 225 g Unsalted Butter
- 225 g Dark Chocolate
- 4 Large Eggs
- 300 g Light Brown Sugar
- 175 g Plain Flour
- 100 g Desiccated Coconut
- 228 g Bounty (4 bars, cut into bitesize chunks)
Instructions
To Make the Bounty Brownies
- Preheat the oven to 180C (160C Fan) and line a 9" square baking tin with baking paper.
- Put the chocolate and butter into a large bowl and melt in the microwave on 20-second bursts stirring in between each burst until completely melted and smooth. Leave to one side.
- In a separate bowl whisk the eggs and sugar together until they have doubled in volume.
- Pour the chocolate mixture into the egg mixture and fold them together. You need to be gentle during the stage because you don’t want to knock all the air out of your eggs.
- Add in the flour and fold again until they are all completely incorporated
- Fold through the desiccated coconut and bounty pieces until they are evenly distributed.
- Bake in the oven for 30-35 minutes. You will know they are ready because they will have a slight wobble
- Leave to cool in the tin for 15-20 minutes before moving to a wire rack to cool completely.
Notes
- These Bounty Brownies will last up to 5 days in the fridge
