Eton Mess Fudge

This Eton Mess Fudge recipe is a White Chocolate Strawberry fudge packed full of Meringue and freeze-dried Strawberries.

Ingredients

For the Fudge

  • 500 g White Chocolate
  • 397 g Condensed Milk (1 tin)
  • 1-2 tsp Strawberry Flavouring
  • 100 g Icing Sugar
  • 6 g Freeze-Dried Strawberries
  • 6 Meringue Nests (crushed)

To Decorate

  • 2 Meringue Nests (crushed)
  • 1 g Freeze-Dried Strawberries

Instructions

To Make the Fudge

  • Line your 7" square cake tin with baking parchment and leave to one side.
  • Add the white chocolate to a large bowl and melt in the microwave on 20 second bursts stirring in between until compleltey melted and smooth OR melt the chocolate in a saucepan over a low/medium heat.
  • Once the chocolate has melted add in the flavouring and condensed milk and mix until smooth.
  • Add in the icing sugar and mix. The fudge should now be really thick and gloopy.
  • Add in the freeze-dried strawberries and crushed meringues and fold these through until they are evenly distributed.
  • Pour the mixture into your cake tin and smooth.
  • Sprinkle over the freeze-dried strawberries and crushed meringue and press these gently into the top of the fudge.
  • Pop it into the fridge to set (this should take around 4 hours)
  • Once the fudge has set remove from the fridge and cut into individual portions.
