Party Ring Cupcakes

Just look at these cupcakes for a second. I mean look at how amazing they look. These Party Ring Cupcakes have a light brown sugar sponge, vanilla buttercream and a white chocolate drizzle to look just like the famous biscuit.

Ingredients

For the Cupcakes

  • 145 g Unsalted Butter or Stork
  • 145 g Light Brown Sugar
  • 145 g Self-Raising Flour
  • 1 tsp Baking Powder
  • 3 Large Eggs
  • 1 tsp Vanilla Extract

For the Buttercream

  • 600 g Icing Sugar
  • 300 g Unsalted Butter
  • 1 tsp Vanilla Extract
  • 3-4 tsp Whole Milk (optional)
  • Pink Food Colouring
  • Purple Food Colouring
  • Yellow Food Colouring

For the Decoration

  • 100 g White Chocolate
  • Pink Food Colouring
  • Party Rings

Instructions

To Make the Cupcakes

  • Preheat the oven to 180C/160 Fan. Line a muffin tray with cupcake liners and leave to one side.
  • In a large bowl, cream together the sugar and butter until light and fluffy.
  • Add in the flour, baking powder, eggs, and vanilla and whisk until all combined.
  • Spoon the mixture into the cupcake liners. I use a small ice cream scoop to do this so I know that they are all even. 
  • Bake in the oven for 15-20 minutes. You will know the cupcakes are ready when they are golden brown and springy to touch.

To Make the Buttercream

  • In a bowl add the icing sugar, butter and vanilla extract and mix until it is combined. If you find the buttercream is too thick add 1tbsp of milk and mix again. Repeat until the buttercream is the perfect consistency.
  • Split the buttercream into four bowls. To one bowl add pink food colouring, to the second add purple food colouring and to the third add yellow food colouring. I would recommend adding a small amount at a time and mixing then adding more if you feel it needs it.
  • Add the buttercream to four separate piping bag and pipe onto the top of the cupcakes.

To Decorate

  • Add 50g of white chocolate to two separate bowls and melt in the microwave in 20-second bursts until they are completely melted and smooth.
  • Put one of the bowls of white chocolate into a piping bag and leave to one side.
  • To the second bowl of white chocolate add a small amount of pink food colouring and mix. Repeat until you reach the desired colour. Add this to a piping bag.
  • Drizzle the white chocolate over the top of your pink and purple cupcakes.
  • Drizzle the pink chocolate over the top of the yellow and white cupcakes.
  • Finish with a party ring.
