Strawberry and Chocolate Cupcakes

These chocolate sponge cupcakes have a strawberry flavoured buttercream on top and of course are decorated with chocolate covered strawberry's.

Ingredients

For the Chocolate Covered Strawberries

  • 200 g Dark Chocolate
  • 12 Strawberries

For the Cupcakes

  • 145 g Unsalted Butter or Stork
  • 145 g Light Brown Sugar b
  • 145 g Self-Raising Flour
  • 35 g Cocoa Powder
  • 3 Medium Eggs
  • 1 tsp Baking Powder

Instructions

To Make the Chocolate covered Strawberries

  • 1. Cover a flat oven tray with greaseproof paper and leave to one side.
    2. Melt the dark chocolate in a microwave on 20-second bursts, stirring in between until completely melted. If you don't have a microwave you can place the chocolate in a heatproof bowl, and put over a pot of simmering water until completely melted.
    3. Wash the strawberries and when the chocolate has melted dip the strawberries into the chocolate until they are completely covered put them on the over tray from earlier and pop them into the fridge.

To Make the Cupcakes

  • 1. Pre-heat the oven to 150 fan (170C). Line a cupcake/muffin tray with cupcakes liners and leave to one side.
    2. In a bowl mix together the butter ad sugar until light and creamy. Add in the flour, cocoa powder, eggs and baking powder and mix until all the ingredients are incorporated.
    3. Dive the mixture evenly between the cupcake cases and bake in the oven for 15-20 minutes until they are completely cooked. You will know this because the top of the cupcake will spring back when touched or a skewer inserted into the middle of the cupcake and it comes out clean.
    4. Leave to one side to cool.

To Make the Buttercream

  • 1. While the cupcakes are cooling you can make the buttercream. In a bowl mix together the icing sugar and butter until combined. Add in the strawberry flavouring and pink food colouring.
    2. If the mixture is quite thick you can add a teaspoon of milk to the buttercream util it is your desired consistency.
    3. Pipe the buttercream onto the top of the cupcake. I use a Wilton 1M piping tip.
    4. Decorate with some sprinkles and your chocolate strawberries from earlier.
