Trick or Treat Cupcakes
These Trick or Treat vanilla cupcakes are filled with a spooky hidden centre. Will you get the treat centre filled with lovely Halloween sprinkles or the trick centre filled with green lemon curd slime?

For the Cupcakes
- 145 g Caster Sugar
- 145 g Unsalted Butter or Stork
- 145 g Self-Raising Flour
- 3 Large Eggs
- 1 tsp Baking Powder
- 1 tsp Vanilla Extract
For the Buttercream
- 250 g Unsalted Butter
- 500 g Icing Sugar
- 1 tsp Vanilla Extract
- Purple Food Colouring
- Halloween Decorations
For the Filling
- 200 g Lemon Curd
- Green Food Colouring
- Sprinkles
To Make the Cupcakes
Preheat the oven to 180C/160 Fan. Line a muffin tray with cupcake liners and leave to one side.
In a large bowl, whisk together the sugar and butter until light and fluffy.
Add in the flour, eggs, baking powder and vanilla and whisk until all combined.
Spoon the mixture into the cupcake liners. I use a small ice cream scoop to do this so I know that they are all even.
Bake in the oven for 15-20 minutes. You will know the cupcakes are ready when they are golden brown and springy to touch.
To Make the Buttercream
While the cupcakes are cooling make the buttercream.
In a large bowl add the butter, icing sugar and vanilla and mix until it is all combined. Add in the food colouring a little at a time until it reaches the desired colour.
Spoon the mixture into your piping and leave to one side.
To Decorate
Once your cupcakes have cooled remove the centre of each one. Keep these centres as we will put them back in once we have filled the centre of the cupcakes.
At the lemon curd to a bowl and add in the green food colouring a little at a time until it has reached the desired colour.
Carefully spoon the green curd into the middle of six of the cupcakes. Pop the centre of the cupcake back in and leave to one side.
To the other six cupcakes add your sprinkles to the centre. Pop the centre of the cupcakes back in.
Pipe the buttercream onto the top of the cupcakes and decorate. I used fun edible eyes and enjoy!
- These cupcakes will last 3-4 days in an airtight container.
- You can fill the centre of your cupcakes with anything you want. Why not try sweets for the treat like M&Ms or Haribos?
- You could also dye the lemon curd different colours too why not try red?
- You can also use any colour of food colouring for the buttercream. I was trying to think of a Halloweeny themed colour.
