This Skittles ice cream is a homemade vanilla ice cream packed full of Skittles.

Skittles
Skittles are chewy, fruity sweet and they are utterly delicious.
I used the classic Skittles the ones that come in red packets but you can use any flavour of Skittles you want too.
For this recipe, I used 2 share bags of Skittles, however, if you want to add more Skittles you could add another share bag to the mixture.
The Skittles leave a rainbow colour trail in the vanilla ice cream which I absolutely love.

No-churn
So this is a no-churn ice cream recipe, which means that you don’t need an ice cream maker to make it.
The ice cream is made from two base ingredients, double cream and condensed milk which are whisked together until they form soft peaks.
The double cream and condensed milk together make for a very creamy and light ice cream mixture.
To this I also added vanilla extract, I use Nielsen-Massey Vanilla Extract. There are so many different brands of Vanilla Extract out there and Vanilla Bena Paste would also work perfectly in this recipe. Just ensure that it is an extract you use and not a vanilla flavouring.

Ice Cream Tub
You can use any freezer-safe tub you have for this ice cream. I use my 2lb loaf tin, but an old, clean ice cream container will work or a freezer-safe Tupperware container.
Freezing
Of course, this ice cream does need to be frozen.
Once you have the ice cream in the container, make sure you put the lid on it and pop it into the freezer.
If your container doesn’t have a lid or you are using a loaf tin to store the ice cream. Wrap it twice in cling film before putting it into the freezer.

Alternatives
I used two Skittles share bags in this recipe but you can add an extra share bag if you want extra Skittles.
I also used the classic Skittles in the red packet but you can use any flavour of Skittles you want.

Skittles Ice Cream
Ingredients
For the Skittles Ice Cream
- 550 ml Double Cream
- 397 g Condensed Milk (one tin)
- 1 tsp Vanilla Extract
- 272 g Skittles (two share bags)
Instructions
To Make Skittles Ice Cream
- Add the double cream, condensed milk and vanilla extract to a large bowl and whisk on a medium speed until it is thick and holds soft peaks.
- Fold through 200g of Skittles until they are evenly distributed.
- Pour the mixture into your container or loaf tin and sprinkle over the remaining skittles.
- Cover your ice cream either with a lid or wrap in cling film.
- Put the ice cream into the freezer for 4-5 hours until completely set.
Notes
- This Skittles Ice Cream will last up to 3 months in the freezer.
