Cinnamon Roll Blondies

Blondies 

As someone who loves white chocolate, I am obsessed with blondies. They have a soft and fudgy texture and are crammed full of white chocolate chips.  

These Cinnamon Roll Blondies combine my love of blondies with a delicious cinnamon roll. Cinnamon Rolls are one of my go-to sweet treats at this time of year.  

Cinnamon is such a warming flavour and paired with the blondies is a marriage made in heaven.

White Chocolate Chips  

You can’t have a blondie without adding in some white chocolate chips. You can either use pre-bought chocolate chips in these blondies or if you prefer a thicker chunk of chocolate you could use a bar of chocolate and cut it into chunks.  

When I make blondies, I always go with the chunks option.

I buy a bar of white chocolate and break it up. Sometimes I add the squares of chocolate into the blondie mixture as they are. For these though, I did cut the squares of chocolate in half before adding them in. 

Cinnamon Roll Filling 

What makes these blondies Cinnamon Roll flavoured is the delicious cinnamon roll filling that is used on top.  

The Cinnamon flavour comes from 3 ingredients, cinnamon, brown sugar and melted butter, the same as you would use when making cinnamon rolls. 

I poured the cinnamon filling over the top of the blondies and used a skewer to swirl it through the blondie mixture.  

Baking 

Blondies, like brownies should have a soft and fudgy texture. The blondies need to be baked in the oven for 25-30 minutes or until they are golden brown in colour.  

It can be difficult to tell if they are underbaked. With blondies, you can’t use a skewer to test the centre like you would with a cupcake. You want the blondies to have a slight wobble to them when you take them out of the oven and then they will firm up as they cool. 

Topping Options  

I didn’t top these Cinnamon Roll Blondies with anything. You can make a cream cheese frosting and spread this over the top just like you would with a Cinnamon Roll.  Find the recipe for cream cheese frosting in my Blueberry Muffin post.

You could also mix icing sugar with water and drizzle this over the top too. Or you could just leave them naked like I did.  

Alternatives

Cinnamon Roll Blondies

Ingredients

To Make the Cinnamon Roll Blondies

  • 175 g Unsalted Butter
  • 175 g Light Brown Sugar
  • 50 g Granulated Sugar
  • 3 Large Eggs
  • 250 g Plain Flour
  • 1 tsp Vanilla Extract
  • 300 g White Chocolate

For the Cinnamon Roll Filling

  • 75 g Light Brown Sugar
  • 30 g Ground Cinnamon
  • 50 g Unsalted Butter (melted)

Instructions

To Make The Blondies

  • Preheat the oven to 180C (160CFan) and line a 9 inch square cake tin with baking parchment. Leave to one side.
  • In a bowl cream together the butter and both sugars until lovely and light in colour.
  • Add in the eggs, plain flour, vanilla extract and white chocolate and mix again until all the ingredients are combined fully.
  • Pour the mixture into your cake tin and smooth until flat and even. Leave to one side.

To Make the Cinnamon Roll Filling

  • Add the sugar, cinnamon and butter to a bowl and mix until combined.
  • Pour this over the top of your blondies.
  • Using a cake skewer swirl the cinnamon mixture through your blondies.
  • Bake in the oven for 25-30 minutes, until they are golden in colour and ever so slightly wobble.
  • Remove from the oven and leave to cool in the tin for 15-20 minutes before transferring to a wire rack to cool fully.

Notes

  • These Cinnamon Roll Blondies will last around 5+ days in an airtight container.

    Goodness! These blondies sound incredible; what a great recipe to share! I love blondies but have never made them before, so this has got me wanting to give them a try.
