This is one of the most epic recipes I have made in a while. Peanut Butter and Millionaire Shortbread is such the perfect combination. The peanut butter caramel is just, Out. Of. This. World!

How To Make Peanut Butter Millionaire Shortbread
To make the shortbread base you only need four ingredients. Flour, sugar, butter and peanuts. The peanuts are of course optional. Mix all four ingredients together until a dough is formed and press it into the base of your square tin. That’s it. That is all you need to do to make a delicious shortbread. It is so easy and simple.
For the shortbread in this recipe, I used caster sugar, but if you wanted it to have a slight hint of caramel flavour you could substitute this for light brown sugar. I find it easier to cream together the butter and sugar first and then add in the flour and peanuts, but you could do the all-in-one method if you prefer.
Like with my other millionaire shortbread recipes, I used a square 9”x 9” loose-bottomed cake tin. I just find it so much easier to get the millionaire shortbread out at the end. It is also the perfect size for millionaire shortbread. You get lovely thick shortbread and caramel layers.

I find the easiest way to get the shortbread base into the cake tin, is to press it in using either the back of a spoon (just dip it in some flour to stop it from sticking) or by using my hands.
You will know it is baked when it is golden in colour around the edges.
I don’t normally wait for the shortbread to cool completely before I make my caramel. You can. But it’s not essential. Once the shortbread is out of the oven, I leave it to one side and make the caramel straight away.

Caramel can be a bit daunting but please make your own. If you use a shop-bought caramel, no matter how thick it is, it won’t set. So, the minute you cut into it, it will splodge everywhere. Also, you can’t add peanut butter to a shop-bought caramel.
Add all the ingredients to a saucepan and heat on a low/medium heat. Another thing with caramel is you need to use unsalted butter. It won’t set properly if you use a baking spread. I cut it into cubes and added them to the saucepan with the condensed milk, golden syrup, sugar and smooth peanut butter.
Stir the mixture continuously until the butter is completely melted and the sugar has dissolved. You don’t want it to start bubbling until the butter has completely melted so you need to keep it at a low temperature.

Once the butter is completely melted turn the heat up and stir continuously. It will start to thicken and turn a lovely golden caramel colour. Just remember to run your spatula around the sides as well as the bottom of the pot to stop it from catching. If you do find little brown specks, it is just the bits that have caught.
If you are struggling, or find that it is starting to catch, turn the heat down. It might just take a few extra minutes. The caramel will be perfectly fine to eat with the flecks in but if you want to you can run the caramel through a sieve before you add it to the shortbread.
Put the mixture into the fridge and let the caramel set. Once the caramel has set, remove it from the fridge, and melt the chocolate. You can either melt the chocolate in a bain-marie or in a heatproof bowl in the microwave. Pour it over the caramel. In a separate bowl, soften the peanut butter by heating it for 10-20 seconds. Drizzle it over the top of the chocolate and using a skewer swirl it into the chocolate.
Put the millionaire shortbread back into the fridge until the chocolate has completely set before cutting.

There are a few different ways to cut Millionaire Shortbread cleanly. The first is to leave the chocolate to set at room temperature rather than put it into the fridge. This just helps it set slightly softer which makes it easier to cut.
Another way you can cut Millionaire Shortbread cleanly is by warming up the knife before you cut into the shortbread. Do this by running the knife under hot water, drying it off and then cutting.
How long does Millionaires Shortbread last in the fridge?
If you store the millionaire shortbread in an air-tight container it will last in the fridge for around 2 weeks.

Alternatives
You don’t need to add peanuts to the shortbread this is optional.
Why not decorate the top with some peanut-themed chocolates as well as peanut butter.

Peanut Butter Millionaire Shortbread
Ingredients
For the Peanut Shortbread
- 100 g Caster Sugar
- 200 g Unsalted Butter or Stork
- 300 g Plain Flour
- 75 g Peanuts (optional)
For the Peanut Butter Caramel
- 397 g Condensed Milk (one tin)
- 50 g Caster Sugar
- 75 g Golden Syrup
- 225 g Unsalted Butter
- 75 g Peanut Butter
For the Topping
- 300 g Milk Chocolate
- 100-150 g Peanut Butter
Instructions
To Make the Peanut Shortbread
- Line a 9” square cake tin with non-stick baking paper. Preheat the oven to 180C (160C Fan).
- Add the sugar and butter, until it is pale in colour and fluffy.
- Add in the flour and peanuts and mix until a dough is formed.
- Press the dough into the bottom of your lined tin until it is flat and even.
- Bake for 20-25 minutes or until golden.
- Remove from the oven and leave to one side.
To Make the Peanut Butter Caramel
- To make the caramel put the condensed milk, sugar, golden syrup, butter and peanut butter into a large pan over a low heat.
- Stir continually until the sugar has dissolved and the butter has melted. Turn the heat up to medium and boil until the caramel has thickened and darkened in colour. Stir continuously to ensure the caramel doesn’t burn.
- It should take between 4-6 minutes until the caramel is nice and thick pour it over the top of your shortbread biscuit and leave to cool.
- Put it in the fridge until the caramel has cooled and set.
To Decorate
- Add the chocolate to a heatproof bowl and melt in 20-second bursts stirring in between until it is smooth and completely melted.
- Add the Peanut Butter to a separate heatproof bowl and pop it into the microwave for 10-20 seconds to loosen it.
- Pour the Chocolate over the top of the Caramel and smooth.
- Drizzle the Peanut Butter over the top and then using a skewer swirl it into the chocolate.
- Put the millionaire shortbread back into the fridge until the chocolate has set (approx 1-2 hours)
- Once the chocolate has set remove it from the tin and cut it into individual slices.
Notes
- This Peanut Butter Millionaire Shortbread will last 1 week if stored in an airtight container.
