Mini Egg Rocky Road

Ingredients

For the Rocky Road

  • 400 g White Chocolate
  • 150 g Digestive Biscuits
  • 150 g Marshmallows
  • 150 g Mini Eggs

Instructions

To Make the Rocky Road

  • Line an 8” square cake tin with parchment paper and leave it to one side.
  • Add the chocolate to a heatproof bowl and melt in the microwave on 20-second bursts stirring in between until the chocolate has completely melted and is smooth.
  • To the white chocolate add in 100g of marshmallows, digestives and Mini Eggs and mix until completely coated in chocolate.
  • Pour the mixture into your cake tin. Use a spatula or the back of a spoon to press the mixture into the cake tin.
  • Decorate the top of the Rocky Road with the leftover Digestives, Marshmallows and Mini Eggs. Press them into the top of the Rocky Road so that they stick otherwise they will just fall off.
  • Put the Rocky Road in the fridge until the chocolate has set. I left mine in the fridge overnight.
  • Once the chocolate has set you can cut it into as many Rocky Road bars as you wish. I made mine into 16 bars but if you want more Rocky Road then you could cut them into 9 squares or 12 squares.

Notes

  • This Mini Egg Rocky Road will last 1+ weeks in the fridge. 
  • This recipe was updated in March 2023. The original amounts of ingredients were 500g of white chocolate, 120g of Marshmallows, Digestives and Mini Eggs. I have reduced the amount of chocolate in the recipe and increased the remaining ingredients.
