Mini Egg Rocky Road!

This Mini Egg Rocky Road is packed full of marshmallows, digestives and of course Mini Eggs.  

Rocky Road is such a quick and easy recipe to make, and it is perfect for making with children. This Mini Egg Rocky Road only has 4 ingredients and is inexpensive too.

Mini Egg Rocky Road  

Traditional Rocky Road is made using milk chocolate and can include everything from glace cherries to nuts and even popcorn.  

I wanted to make the Mini Eggs the star of this show, it is Mini Egg Rocky Road after all. So, I decided to only add marshmallows and digestives.  

I also used white chocolate instead of milk chocolate. White chocolate is my absolute favourite, and it is so easy to swap it out for milk or dark chocolate if you prefer.

Digestives  

I went with a simple digestive biscuit in this recipe but any biscuit will work perfectly. You could use a filled biscuit like an Oreo, a chocolate-covered biscuit like KitKats or even chocolate digestives.  

You could also use a mixture of different biscuits if that is what you have. That is the beauty of Rocky Road you can literally add anything to it, and it will still taste delicious.  

Marshmallows  

Whenever I make marshmallows, I always use the mini white and pink ones you find in the baking aisle. They are a perfect size and because they are so light you get a lot of marshmallows for your money, meaning that this Rocky Road is crammed full of them.  

Normal-sized marshmallows will work just as well but they are bigger, so you won’t get as many of them throughout the rocky road compared with the mini ones.  

Square Tin  

Normally, when I bake with a square tin, I always use a 9” one. However, for this rocky road I always think it works so much better in a smaller tin. So I use an 8” x 8” square tin for this recipe.  

As it is smaller it just makes the Rocky Road a bit chunkier and utterly perfect. You can still get up to 16 portions out of the mixture, the amounts would be smaller but thicker.  

Setting  

Rocky Road is a no-bake recipe and this just means that you don’t need to bake it in the oven. Instead, once your Rocky Road is ready you put it into the fridge for a few hours until the chocolate has set before cutting it into individual portions.  

Alternatives  

If you prefer you can replace the white chocolate with milk or dark.

Mini Egg Rocky Road

Ingredients

For the Rocky Road

  • 400 g White Chocolate
  • 150 g Digestive Biscuits
  • 150 g Marshmallows
  • 150 g Mini Eggs

Instructions

To Make the Rocky Road

  • Line an 8” square cake tin with parchment paper and leave it to one side.
  • Add the chocolate to a heatproof bowl and melt in the microwave on 20-second bursts stirring in between until the chocolate has completely melted and is smooth.
  • To the white chocolate add in 100g of marshmallows, digestives and Mini Eggs and mix until completely coated in chocolate.
  • Pour the mixture into your cake tin. Use a spatula or the back of a spoon to press the mixture into the cake tin.
  • Decorate the top of the Rocky Road with the leftover Digestives, Marshmallows and Mini Eggs. Press them into the top of the Rocky Road so that they stick otherwise they will just fall off.
  • Put the Rocky Road in the fridge until the chocolate has set. I left mine in the fridge overnight.
  • Once the chocolate has set you can cut it into as many Rocky Road bars as you wish. I made mine into 16 bars but if you want more Rocky Road then you could cut them into 9 squares or 12 squares.

Notes

  • This Mini Egg Rocky Road will last 1+ weeks in the fridge. 
  • This recipe was updated in March 2023. The original amounts of ingredients were 500g of white chocolate, 120g of Marshmallows, Digestives and Mini Eggs. I have reduced the amount of chocolate in the recipe and increased the remaining ingredients.

    1. White chocolate is my favourite and it goes perfectly with Mini Eggs! You could switch it out for Milk or Dark chocolate if you would prefer! I hope you enjoy them!
