Ring Doughnuts
First off, I am going to apologise that is has taken me so long to post this Ring Doughnut recipe. I have used three different toppings on these ring doughnuts, but you can use any of your favourite toppings, mix them up like me or just make them all the same.

For the Doughnuts
- 500 g Strong White Bread Flour
- 100 g Caster Sugar
- 14 g Dried Active Yeast
- 125 g Unsalted Butter
- 200 ml Whole Milk
- 1 tsp Vanilla Extract
- 2 Large Eggs

- 450 g Dark Chocolate
- Freeze-Dried Strawberries
For Decorating - Sprinkle Doughnuts
- 350 g Icing Sugar
- 60 ml Water
- 25 g Golden Syrup
- Sprinkles
To Make the Doughnuts
Add the flour, caster sugar and yeast to a large bowl and mix together.
Add in the butter and mix until it forms breadcrumbs. You can also rub the butter and into the mixture if you prefer.
Put your milk in a heatproof jug or bowl and heat in the microwave. I warmed mine for 2 minutes and 30 seconds. If you don’t know your microwave I would recommend heating it in 30-second bursts until it is warm. You can also warm the milk in a saucepan. You don’t want it to be boiling but you want there to be steam coming from the milk.
Add the milk, eggs and vanilla to the dry ingredients and mix together.
Knead the dough together. I used the dough hook on my kitchen aid but you can do this by hand too. It will be sticky to begin with. You will know it is ready because the dough with be springy and no longer sticky.
Lightly oil a large bowl and add the dough to it. Cover the top of the bowl with cling film and leave the dough to rise for 1hour-1 and a half hours or until it doubles in size.
To Shape the Doughnuts
Line 2-3 baking trays with baking parchment and leave to one side.
Once the dough has risen take it out of the bowl and roll it out onto a lightly floured surface. You need it to be around 1.5-2cm thick.
Using a 10cm cutter, cut out the doughnuts. In the middle of each doughnut you have cut out, cut out the centre using a 4cm cutter. Put the doughnuts onto your baking trays, remember and space them out.
You can re-roll the dough and cut the doughnuts out until you have no dough left.
Cover the doughnuts with cling film.
Leave the doughnuts to prove again for 1.5-2 hours or until doubled in size.
To Fry the Doughnuts
Line 2-3 flat baking trays with kitchen towel and leave to one side.
Pour the oil into a deep saucepan or into a deep-fat fryer.
Heat the oil to 150C – I would recommend using a thermometer to check the temperature.
Lower the doughnuts into the oil, if you are using a deep saucepan I would recommend using a large slotted spoon to do this. I made two at a time.
Fry them for 1 minute and 30 seconds – 2 minutes and 30 seconds each side. The doughnuts should be golden brown in colour. Don’t worry if they have a white ring around the centre of them this is completely normal.
Once they have cooked carefully remove them from the oil (they will be hot!) and place them onto a flat baking try lined with kitchen towel. Leave them to cool (if you are making sugar doughnuts they still need to be warm when you dip them into the sugar for it to stick, so don’t cool them completely. Just until they are cool enough to touch and then coat them in sugar). Repeat for all the doughnuts.

Melt the chocolate in a microwave in 30-second bursts stirring in between until it is completely melted and smooth.
Dip the doughnut into the chocolate until the top is completely coated.
Remove from the chocolate and place back onto the flat baking tray and sprinkle over some freeze-dried strawberries.
To Decorate - Sprinkle Doughnuts
In a bowl mix together icing sugar, golden syrup and water until it is all combined and runny.
Add your sprinkles to a separate bowl.
Dip the doughnuts into the icing sugar mixture until the top is coated and then dip into the sprinkles. If you find there are any gaps you can sprinkle the sprinkles on top to fill them.
