Ring Doughnuts
First off, I am going to apologise that is has taken me so long to post this Ring Doughnut recipe. I have used three different toppings on these ring doughnuts, but you can use any of your favourite toppings, mix them up like me or just make them all the same.
I don’t know about you but doughnuts remind me of Spring and Summer. The smell of them cooking remind me of being at a fun fair with friends and family, riding all the Rollercoaster’s and Waltzers until I am dizzy.
I used three different toppings on these but there are endless amounts of decorations you could do. I went for a traditional sugar doughnuts and based the other two on my favourite cake decorations chocolate and strawberry doughnuts (after my Chocolate & Strawberry Cake) and doughnuts covered in sprinkles (after my Funfetti Cupcakes).
These doughnuts too take a little while to make because you need to prove them twice but trust me it is so worth it for the deliciously soft and sweet doughnut you have at the end.

Ring Doughnuts
To start with I added the dry ingredients to a large bowl and mixed together. Next I added in the butter and mixed using the paddle attachment on my KitchenAid until it formed breadcrumbs. You can also rub the butter into the dry ingredients if you prefer.
Now you need to heat the milk up. I did this in the microwave but you could also warm it up in a saucepan too if you prefer. You don’t want the milk to be boiling but you don’t want it to be lukewarm either. Mine was in the microwave for around 3 minutes but what I would recommend is putting in the microwave on 30 second bursts until you see steam coming from the milk.
Add the milk, eggs and vanilla to the breadcrumb mixture and mix together.
Now you need to knead the mixture together. It will be quite sticky to begin with and you can do it one of two ways.

The first way is by hand. I would recommend kneading on a lightly floured work surface. Or you can do this using a mixer with a dough hoot.
You will know the dough is ready because it will be springy and no longer sticky.
Lightly oil a large bowl and put the dough in. Cover the top with cling film and leave it to rise for around 1 hour to 1 hour and 30 minutes or until it doubles in size.

Shaping the Ring Doughnuts
Line 2-3 baking trays with baking parchment and leave to one side. Once your dough has risen tip it out onto a lightly floured surface. Roll the dough until it is around 1.5-2cm thick.
Using a 10cm cookie cutter, cut out the doughnuts. In the middle of each doughnut cut out the centre using a 4cm cookie cutter. Put each doughnut onto the baking trays, make sure that they are spaced out.
You can re-roll the dough until you have no dough left. Cover the doughnuts with cling film and leave to prove again for another 1-2 hours or until doubled in size.

Frying the Doughnuts
Pour the oil into a deep saucepan or into a deep-fat fryer. Heat the oil to 150C, I would recommend using a thermometer to check the temperature.
Lower the doughnuts into the oil. I made two at a time. Fry them for around 1 minute and 30 seconds to 2 minutes and 30 seconds on each side. The doughnuts should be golden brown in colour.
Once they have cooked carefully remove them from the oil and place them onto a flat baking tray lined with kitchen towels. Leave them to cool fully (unless you are making sugar doughnuts then you will need to be warm when you dip them into the sugar. So don’t cool them completely. Just cool enough for you to touch them and then coat in the sugar)

Decoration
Okay, so as I said above I made three different toppings you can make one of the same, or all different or you can make your own topping for them.
Sugar – As I said above, your doughnuts need to still be slightly warm when you dip them into the sugar. I poured the sugar into a bowl larger than the doughnuts and then dipped each side of the doughnut in.
Chocolate & Strawberry – Melt the chocolate in the microwave in 30 second bursts until it is completely melted and smooth.
Dip the doughnuts into the chocolate until the top is completely coated. Remove from the chocolate and put them back onto the flat baking tray. Sprinkle over some freeze dried strawberries.
Sprinkles – Mix together the icing sugar, golden syrup and water until it is combined and runny. Add your sprinkles to a separate bowl. Dip the doughnuts into the icing sugar mixture until the top is coated and then dip into the sprinkles. If you find there are any gaps with the sprinkles you can sprinkle the sprinkles on top to fill them in.

Alternatives
There are endless possibilities when it comes to decorating these doughnuts.
Don’t throw away the centre parts of the doughnuts and you can cook these too. Just pop them into the hot oil and cook for around 30 seconds to 1 minute and 30 seconds on each side until they are golden brown.

Ingredients
For the Doughnuts
- 500 g Strong White Bread Flour
- 100 g Caster Sugar
- 14 g Dried Active Yeast
- 125 g Unsalted Butter
- 200 ml Whole Milk
- 1 tsp Vanilla Extract
- 2 Large Eggs
For Frying the Doughnuts
- 2-4 L Sunflower Oil
For Decorating – Sugar Doughnuts
- 400 g Caster Sugar
For Decorating – Chocolate & Strawberry Doughnuts
- 450 g Dark Chocolate
- Freeze-Dried Strawberries
For Decorating – Sprinkle Doughnuts
- 350 g Icing Sugar
- 60 ml Water
- 25 g Golden Syrup
- Sprinkles
Instructions
To Make the Doughnuts
- Add the flour, caster sugar and yeast to a large bowl and mix together.
- Add in the butter and mix until it forms breadcrumbs. You can also rub the butter and into the mixture if you prefer.
- Put your milk in a heatproof jug or bowl and heat in the microwave. I warmed mine for 2 minutes and 30 seconds. If you don’t know your microwave I would recommend heating it in 30-second bursts until it is warm. You can also warm the milk in a saucepan. You don’t want it to be boiling but you want there to be steam coming from the milk.
- Add the milk, eggs and vanilla to the dry ingredients and mix together.
- Knead the dough together. I used the dough hook on my kitchen aid but you can do this by hand too. It will be sticky to begin with. You will know it is ready because the dough with be springy and no longer sticky.
- Lightly oil a large bowl and add the dough to it. Cover the top of the bowl with cling film and leave the dough to rise for 1hour-1 and a half hours or until it doubles in size.
To Shape the Doughnuts

- Once the dough has risen take it out of the bowl and roll it out onto a lightly floured surface. You need it to be around 1.5-2cm thick.
- Using a 10cm cutter, cut out the doughnuts. In the middle of each doughnut you have cut out, cut out the centre using a 4cm cutter. Put the doughnuts onto your baking trays, remember and space them out.
- You can re-roll the dough and cut the doughnuts out until you have no dough left.
- Cover the doughnuts with cling film.
- Leave the doughnuts to prove again for 1.5-2 hours or until doubled in size.
To Fry the Doughnuts
- Line 2-3 flat baking trays with kitchen towel and leave to one side.
- Pour the oil into a deep saucepan or into a deep-fat fryer.
- Heat the oil to 150C – I would recommend using a thermometer to check the temperature.
- Lower the doughnuts into the oil, if you are using a deep saucepan I would recommend using a large slotted spoon to do this. I made two at a time.
- Fry them for 1 minute and 30 seconds – 2 minutes and 30 seconds each side. The doughnuts should be golden brown in colour. Don’t worry if they have a white ring around the centre of them this is completely normal.
- Once they have cooked carefully remove them from the oil (they will be hot!) and place them onto a flat baking try lined with kitchen towel. Leave them to cool (if you are making sugar doughnuts they still need to be warm when you dip them into the sugar for it to stick, so don’t cool them completely. Just until they are cool enough to touch and then coat them in sugar). Repeat for all the doughnuts.
To Decorate – Sugar Doughnuts
- Pour the sugar into a large bowl and dip the doughnuts in to coat them in sugar.
To Decorate – Chocolate & Strawberry Doughnuts
- Melt the chocolate in a microwave in 30-second bursts stirring in between until it is completely melted and smooth.
- Dip the doughnut into the chocolate until the top is completely coated.
- Remove from the chocolate and place back onto the flat baking tray and sprinkle over some freeze-dried strawberries.
To Decorate – Sprinkle Doughnuts
- In a bowl mix together icing sugar, golden syrup and water until it is all combined and runny.
- Add your sprinkles to a separate bowl.
- Dip the doughnuts into the icing sugar mixture until the top is coated and then dip into the sprinkles. If you find there are any gaps you can sprinkle the sprinkles on top to fill them.
