Christmas Rocky Road
This Christmas Rocky Road is packed full of gingerbread men, marshmallows, sprinkles, dried fruit and walnuts. The perfect quick and easy festive treat.
Rocky Road, is such a great treat and it really is minimal time and effort, I don’t know why I haven’t posted more recipes. Maybe that should be my New Years’ Resolution.
What I love about Rocky Road and this one in particular is that it is so easy to customise and add/remove what you like and don’t like.

Christmas Rocky Road
For this recipe, I used white chocolate, simply because it is my favourite. Milk and Dark Chocolate will also work perfectly for this depending on your favourite.
I find the easiest way to melt the chocolate is in a large bowl in the microwave. Normally only put it in the microwave for 20 seconds before removing it and stirring. I always get so worried that I am going to overheat the chocolate and it will seize. This way I can keep an eye on the chocolate and remove it from the microwave as it has just melted.
When I was trying to decide what I should add to this Rocky Road, I wanted to keep it simple and as traditional as possible. I started with gingerbread men, because is there anything more Christmassy?

The marshmallows are the small ones you normally find in the baking aisle, they are the perfect size for this rocky road.

I also used dried fruit, the one I used included cranberries, which I thought were perfect for the festive season. It also included raisins, sultanas, dried apricot and citrus peel. Again, this is totally optional, and an alternative you could use would be glace cherries. Or you could add the cherries as extras.
Finally, I added in some whole and chopped walnuts and a handful of festive sprinkles and mixed it all together until all the ingredients were completely coated in chocolate.
I used an 8” square cake tin, which is slightly smaller than the one I use for my millionaire shortbread and brownies. But I find it the perfect size to get a lovely chunky piece of Rocky Road. If you use a large cake tin like a 9” then the Rocky Road won’t be as thick as mine, but you will get slightly more pieces out of it.
I always finish my rocky road off by sprinkling the ingredients over the top. I always hold back a small handful of each and press them into the top of the Rocky Road.
Rocky Road needs to be set in the fridge. It shouldn’t take too long until the chocolate has completely set and then you can cut it into individual portions.

Alternatives
The great thing about Rocky Road is you can customise it to your own taste. For example, swap out gingerbread men for plain digestives or any biscuit you fancy.
You could also add some glace cherries if you wanted or replace the mixed fruit with only raisins or cranberries.

Christmas Rocky Road
Ingredients
To Make the Rocky Road
- 500 g White Chocolate
- 100 g Gingerbread Men
- 100 g Marshmallows
- 75 g Mixed Fruit
- 50 g Walnuts
- 20 g Festive Sprinkles
Instructions
To Make the Rocky Road
- Line an 8” square cake tin with parchment paper and leave it to one side.
- Add the chocolate to a heatproof bowl and melt in the microwave on 20-second bursts stirring in between until the chocolate has completely melted and is smooth.
- Add in 90g of gingerbread men, 90g marshmallows, 65g mixed fruit 40g walnuts and festive sprinkles and mix until completely coated in chocolate.
- Sprinkle over the remaining ingredients and press down gently.
- Put the Rocky Road in the fridge for 4 hours or until the chocolate has set.
- Remove from the fridge and cut into individual portions.
Notes
- This Rocky Road will last 1+ weeks in the fridge.
