Pina Colada Fudge
If you like drinking Pina Colada, then you will love this Pina Colada Fudge.
I have already shared so many alcohol-inspired bakes including my Lemon Gin Drizzle Cake, Strawberry Daiquiri Macarons and my Pornstar Martini Cupcakes to name a few. This Pina Colada fudge is a no-bake recipe and is perfect for the warmer summer weather. It is packed full of coconut, rum and pineapple and tastes exactly like a Pina Colada cocktail.

Rum
The only other alcohol-based fudge recipe I have on my blog is my Pink Gin Fudge. In the pink gin fudge recipe, I used Pink Gin. However, for this Pina Colada recipe, I decided to use a Rum flavouring instead.
I used Foodie Flavours Rum Flavouring. It is a high concentrated food flavouring, and you only need a tiny amount to get the delicious rum flavour.

Chocolate
The base of this Pina Colada Fudge is made of just two ingredients – white chocolate and condensed milk. Technically you could use any kind of chocolate you fancy for the base, you could use dark or milk instead, but I find with the flavour of the rum, pineapple and coconut white chocolate works best.

Coconut
I used desiccated coconut both in the fudge and on the top. Coconut is one of my favourite flavours and I wanted this fudge to taste as close to a Pina Colada cocktail as possible.
I decided to use desiccated coconut rather than coconut milk in the recipe for the same reason as I didn’t use rum. Adding extra liquid to the fudge mixture softens it and makes it harder to set so adding in both coconut milk and rum would mean that the fudge wouldn’t set.

Pineapple
I did consider using fresh pineapple in this recipe, but I wasn’t sure how it would set and combine with the chocolate mixture so in the end I decided on using dried pineapple pieces and I am so glad I did.
The dried pineapple works so well in the fudge, it is easy to add it to the gloopy fudge mixture and it has such a great texture within the fudge. You also get a great pineapple flavour that isn’t artificial like it would be if we used a pineapple flavouring.

Alternatives
If you fancied you could also add some Coconut chips or dried coconut to the fudge instead of using desiccated coconut.
You could also use freeze-dried pineapple instead of pineapple chunks.

Pina Colada Fudge
Ingredients
For the Pina Colada Fudge
- 397 g Condensed Milk (1 tin)
- 500 g White Chocolate
- Rum Flavouring
- 100 g Dried Pineapple
- 150 g Desiccated Coconut
Instructions
To Make the Pina Colada Fudge
- Line your 8" square cake tin with baking parchment and leave it to one side.
- Add the white chocolate to a large bowl and melt in the microwave on 20-second bursts stirring in between until completely melted and smooth OR melt the chocolate in a saucepan over a low/medium heat.
- Once the chocolate has melted add in the condensed milk and mix until smooth. The mixture should be super thick and gloopy.
- Following the instructions on the packaging add the rum flavouring.
- Add in the pineapple and 100g of the desiccated coconut and mix until all the ingredients are evenly distributed.
- Pour the mixture into your cake tin and smooth.
- Sprinkle over the remaining 50g of desiccated coconut.
- Pop it into the fridge to set (this should take around 4 hours).
- Once the fudge has set remove it from the fridge and cut it into individual portions.
Notes
- This Pina Colada Fudge will last in the fridge for up to 3 weeks.
