Salted Caramel and Peanut Brownies

Brownies  

Brownies are always seriously indulgent, aren’t they? It doesn’t matter what flavour they are. Nothing beats a good, soft, gooey brownie. There is just something about the chocolatey deliciousness that I am obsessed with. 

It has been a while since I made a yummy Christmas brownie, well probably about a year, to be exact but I couldn’t let the festive season pass by without one.

These Salted Caramel and Peanut Brownies have both salted caramel and salted peanuts in them but don’t worry they don’t taste overly salty. The saltiness from the caramel and peanuts balances out the sweetness of the brownie perfectly.  

Brownies can be quite finickity to get right. You need to beat the eggs and sugar until it doubles in volume and becomes very, very pale. There is no raising agent in these brownies so all of the rise on them comes from the eggs.  

You also need to use dark chocolate and not milk. I know a lot of people aren’t really a fan of dark chocolate and it can be quite bitter but trust me on this; brownies NEED to be made with dark chocolate. Once the chocolate is combined with all the other ingredients and baked it doesn’t taste bitter in the slightest.

Salted Caramel  

So, as I said above I used a salted caramel in these brownies. Normal caramel will also work and be delicious if you prefer.  

I used a tin of Carnations Caramel, added in some finely ground sea salt and gave it a good mix to get my salted caramel.  

You could also make your own caramel and use that instead. The caramel needs to be quite thick and gloopy. Using a caramel sauce that is super thin and runny won’t work in these brownies. 

 

Baking 

When you bake brownies, you don’t want them to be completely set when they come out of the oven. You need them to have a slight wobble in the centre for them to be soft and fudgy.  

If you use a cake tester or skewer to test the centre of the brownies you want them it to come out with the batter on. If there is no batter on the end of your skewer or tester then you have overbaked the brownies. 

Decorating 

I didn’t go with any decoration on the top of these brownies I didn’t think they needed it, but you could drizzle over some melted chocolate, or some leftover caramel. 

Christmas Bakes 

I am sure I say this every Christmas, but this really is my absolutely favourite time of the year to bake. I mean, if you can’t make overindulgent bakes like these brownies now then when can you?

Alternatives

I made my own salted caramel by adding ground sea salt to a tin of Carnations Caramel. You can however use a shop-bought salted caramel or use caramel without the salt.

The peanuts I used were also salted but you can use regular ones if you prefer.

Salted Caramel and Peanut Brownies

Ingredients

For the Salted Caramel and Peanut Brownies

  • 225 g Unsalted Butter
  • 225 g Dark Chocolate
  • 4 Large Eggs
  • 300 g Light Brown Sugar
  • 175 g Plain Flour
  • 300 g Salted Caramel
  • 200 g Salted Peanuts

Instructions

To Make the Salted Caramel and Peanut Brownies

  • Preheat the oven to 180C (160C Fan) and line an 8" square baking tin with baking paper.
  • Put the chocolate and butter into a large bowl and melt in the microwave on 20-second bursts stirring in between each burst until completely melted and smooth. Leave to one side.
  • In a separate bowl whisk the eggs and sugar together until they have doubled in volume.
  • Pour the chocolate mixture into the egg mixture and fold them together. You need to be gentle during the stage because you don’t want to knock all the air out of your eggs.
  • Add in the flour and fold again until they are all completely incorporated
  • Fold through the salted peanuts until they are evenly distributed.
  • Pour half of the brownie mixture into your baking tin. Add half the salted caramel drizzling over the brownie mixture.
  • Pour the remaining half of the brownie mixture into the tin and drizzle over the remaining caramel.
  • Using a cake skewer swirl the caramel through the brownie mixture.
  • Bake in the oven for 30-35 minutes. You will know they are ready because they will have a slight wobble
  • Leave to cool in the tin for 15-20 minutes before moving to a wire rack to cool completely.

Notes

  • These Salted Caramel and Peanut Brownies will last up to 5 days in the fridge.

    This sounds so decadent, and absolutely wonderful! My husband is a huge fan of peanuts and brownies so combining the two in this way sounds like something he would love to try. Great recipe!
