Cookie Bars
So, I only have one other cookie bar recipe on my blog, my Caramel and Pecan Cookie Bars. I thought it was about time I added another.
Cookie bars are cookies that have been baked in a square tin and can be cut into individual squares. Unlike, traditional cookies which are rolled into balls and chilled before baking the cookie bars don’t need to be chilled. Because they are baked in a square tin they don’t spread.

M&M Cookie Bars
I used two types of sugar in this recipe; light brown sugar and granulated sugar. The light brown sugar gives the cookie a lovely caramelly flavour and a light fudgy texture.
I used unsalted butter in this recipe. Previously, for cookie recipes, I have used a baking spread like Stork, but I have found that sometimes it can make the cookies slightly greasy.

I also decided to make these cookie bars chocolate-flavoured, depending on your taste you can leave the cocoa powder out. Just head down to the alternatives section for the amended recipe.
As well as M&Ms I also added milk chocolate chips to these cookie bars. I wanted to make them as gooey and chocolatey and humanly possible so I added as much chocolate as I could.

Square Tin
I used a 9″ cake tin for these M&M Cookie Bars. Personally, I prefer a loose-bottomed cake tin. I just find it so much easier to get the cookie bars out at the end. If you wanted to you could split the mixture into 100g-120g balls and make individual cookies. All the details you need are in the alternatives section below.

Baking
Once the cookie dough has come together, press it into your lined baking tray and bake in the centre of a pre-heated oven. It is super important that you preheat your oven before baking the cookie dough. I always preheat my oven just before I start gathering and weighing my ingredients. Preheating your oven ensures that the cookie bakes at the correct temperature for the correct length of time.
You will know the cookie is baked because it will look slightly dry on top. The cookie will be very soft when it first comes out the oven but it will firm up as it cools.

Alternatives
If you don’t want to make these cookie bars chocolate-flavoured you can remove the cocoa powder and replace it with plain flour.
You could also change the M&Ms out for Smarties, or another chocolate bar completely. Why not try adding Mars or Snickers instead?
To make this recipe into individual cookies instead of cookie bars, split the mixture into 100-120g balls and place onto a lined baking tray. Pop into the freezer for an hour before baking in the centre of your preheated oven for 12-15 minutes.

M&M Cookie Bars
Ingredients
For the M&M Cookie Bars
- 150 g Unsalted Butter
- 150 g Light Brown Sugar
- 50 g White Granulated Sugar
- 1 Large Egg
- 1 Egg Yolk
- 1 tsp Vanilla Extract
- 225 g Plain Flour
- 50 g Cocoa Powder
- 1 tsp Baking Powder
- 1 tsp Bicarbonate of Soda
- 1 tsp Cornflour
- 200 g Milk Chocolate Chips
- 200 g M&Ms
Instructions
To Make the M&M Cookie Bars
- Line a 9" x 9" square baking tin with baking parchment and leave it to one side. Preheat the oven to 180C/160 Fan.
- In a bowl cream together the butter and both sugars until pale in colour and fluffy.
- Add in the eggs, vanilla, flour, cocoa powder, baking powder, bicarbonate of soda and corn flour and mix until completely combined and a dough begins to form.
- Add the chocolate chips and M&Ms and mix again until they are evenly distributed.
- Tip the mixture into your lined baking tin and press down into the bottom of the tin.
- Bake in the oven for 15-20 minutes or until the cookie is golden brown in colour.
- Remove from the oven and leave to cool for 15-20 minutes in the square tin before moving to a wire rack to cool fully.
- Cut into 16 individual portions and enjoy!
Notes
- These M&M Cookie Bars will last 4+ days in an airtight container.
