Chocolate & Salted Caramel Tart

This Chocolate & Salted Caramel Tart includes all my favourite things, a buttery biscuit base, homemade salted caramel and a chocolate ganache topping.

Tarts are one of my favourite desserts ever. They are just so quick and easy like this one.

I made this using a hobnob biscuit base. I must admit I am not a massive fan of pastry bases on sweet tarts so I will always do a biscuit base. This biscuit base is similar to the base on my White Chocolate & Strawberry Tart and some of my cheesecakes like this No-Bake Summer Berry Cheesecake.

Biscuit Base

You could use any biscuit you fancy I went for a hobnob simply because they are my favourite. You could use any plain biscuit or if you want to use a chocolate biscuit or a biscuit with a filling head down to the alternatives section below for the alter amounts.

To make the base, I blitzed the hobnobs in a food processor until they resembled breadcrumbs. Next, I added in the melted butter and blitzed again until the mixture resembles wet sand.

Push the mixture into your tart tin. I found it easiest to put all the biscuit mixture into the centre of the tart tin and then push it into the sides. I used this loose bottomed base tart tin because I find it easier to get the tart out once it is finished.

Make sure the sides of the tart are around half a cm thick, so the filling doesn’t leak. Once you have built the walls of your tart use the remaining biscuit to fill in the base.

Homemade Caramel

For the caramel I made my own because I prefer how it sets but you don’t need to make your own. You could use a thick caramel like carnations caramel instead and if you wanted to make it salted just add 1/2tsp of salt and mix before you add it to the base.

This caramel is the same as the one I used in my Millionaire Blondies. I started by adding all my ingredients to a large saucepan and heating on a low/medium heat. Stir continuously until all the butter has melted and the sugar has dissolved.

For the caramel I would recommend using unsalted butter rather than a baking spread as it helps the caramel to set better.

Once the butter has melted and the sugar has dissolved turn the heat up and stir the mixture until it thickens and turns a delicious caramelly colour.

The tricky part with this caramel is that there is no specific temperature or time to cook it for. I normally cook for 4 minutes or so. If you are looking for an indication of colour you can check out my video for Millionaire Blondies.

Once the caramel is ready pour it into your tart tin and pop it into the fridge to set. This should take around 45 minutes to an hour.

Chocolate Ganache

For the chocolate ganache, I used dark chocolate, but you could use milk or white.

I would recommend making the ganache as it is utterly delicious and soft. If you just use melted chocolate when it sets it will be a solid and quite hard to cut. Also, when you do cut it all the caramel will just splodge out the sides.

Making ganache is super easy add the chocolate and double cream to a heatproof bowl and melt in the microwave on 20 second bursts stirring in between until the chocolate is completely melted and smooth.

Pour on top of your caramel and pop back into the fridge to set. When the ganache sets it should be lovely and shiny.

Decoration

Once your tart has set remove it from the tin and decorate with double cream. I whipped the double cream until it formed stiff peaks and piped it onto the top of the tart using a Wilton 1M Piping Tip and these piping bags.

Finally, I finished it off with some chocolate curl sprinkles.

Alternatives

If you want to use a base with a filling or a chocolate biscuit, I would use 350g of biscut and 125g of melted butter.

As I said above you can use carnations caramel if you don’t feel confident at making your own caramel.

Chocolate & Salted Caramel Tart

Ingredients

For the Base

  • 350 g Hobnobs
  • 175 g Unsalted Butter melted

For the Caramel

  • 397 g Carnations Condensed Milk 1 tin
  • 50 g Caster Sugar
  • 75 g Golden Syrup
  • 225 g Unsalted Butter
  • 1 tsp Salt

For the Chocolate Ganache

  • 200 ml Double Cream
  • 200 ml Dark Chocolate

For the Decoration

  • 300 ml Double Cream
  • Sprinkles

Instructions

To Make the Base

  • Add the butter to a heatproof bowl and melt in the microwave in 20 second bursts until it is completely melted. Leave to one side.
  • Crush your biscuits into small crumbs. I used a food processer, but you could put them in a food bag and crush them with a rolling pin.

To Make the Caramel

  • To make the caramel put the condensed milk, sugar, golden syrup and butter into a large pan over a low heat.
  • Stir continually until the sugar has dissolve and the butter has melted. Turn the heat up to medium and boil until the caramel has thickened and darkened in colour. Stir continuously to ensure the caramel doesn’t burn.
  • Once the caramel is nice and thick it should take between 4-7 minutes remove it from the heat and stir in the salt.
  • Pour it over the top of your biscuit base and leave to cool in the fridge. This should take around 45 minutes.

To Make the Chocolate Ganache

  • In a heatproof bowl add your double cream and chocolate and melt in the microwave on 30 second bursts stirring in between until the mixture is fully incorporated and completely smooth.
  • Pour on top of the caramel and pop it back into the fridge to set.

To Decorate

  • Once the chocolate ganache has set remove the tart from the tin and place it onto your serving plate. Leave to one side.
  • Whisk the double cream until it forms stiff peaks and add it to your piping bag.
  • Pipe the cream onto the top of the tart and finish with some sprinkles.

    1. Noo! You should give it a go it is a lot easier than it looks trust me just take it one element at a time. Plus you can swap out any ingredients for GF alternatives.

        1. Ah there is nothing wrong with not liking caramel. You could just make double the amount of chocolate ganache and make a chocolate tart instead.
