No-Bake Tablet Cheesecake
Oh hey guys, welcome back to another blog post! This week it’s for this delicious Tablet Cheesecake. It has a buttery biscuit base, Vanilla Cheesecake with chunks of tablet, and is decorated with double cream and even more tablet!
What is Tablet?
Well first things first, the tablet I am talking about isn’t an iPad or a Samsung Galaxy.
Tablet is a sugary sweet from Scotland. It is made using sugar, condensed milk and butter and it is normally flavoured with vanilla. It’s somewhat similar to fudge, but Tablet is more brittle and grainy whereas fudge is a lot softer.
If you don’t live in Scotland and tablet isn’t ready available in the supermarket then you can get some from Amazon. I would highly recommend trying it, if you never have, even if you don’t want to make the cheesecake it is still utterly delicious!
What Equipment Will I Need?
I use an 8” Spring Form Tin to make my cheesecakes. If you don’t have one don’t worry, as you can use any cake tin you have lying around, even a loose based one. If your cake tin is bigger or smaller then you may find that the cheesecake is thinner or thicker than mine. If you end up with too much mixture you could split it into seperate individual pots.
To pipe the decoration on the cake I also used a Wilton 1M Piping Tip. All decoration is optional so you could use another piping tip or not use one at all and decorate it in another way. It is completely up to you.
Quick Run Through
For the base of the cheesecake I used a mix of Golden Oreos and Hobnobs. It is completely up to you what you use whether it be a completely dry biscuit like a digestive or a more oaty one like a Hobnob. I crush the biscuits to a fine crumb so they almost look like sand. I then add the melted butter and golden syrup and press it down into the cake tin.
To make the cheesecake I used soft cheese, double cream and Icing Sugar. I also used Dr Oetker Vanilla Extract and table. I didn’t make my own tablet, I used Lees. I start by mixing the soft cheese and icing sugar together for a few minutes.

I then add the Double Cream and Vanilla. I mix until it is thick and can hold its shape. The best way to test this is by turning the bowl upside down like you would for meringue and if the mixture doesn’t fall or start to drip out, it is ready. Once you get to this stage you can add in the chunks of tablet. I used a spatula to fold them in and then put the mixture into my cake tin.
I usually leave the cheesecake to set overnight but for a minimum of 8 hours. Once it has set take it out of the tin and you can decorate. All decorations are optional. I piped double cream creating a double boulder and then piped some swirls on top. I finished it off with some more chunks of tablet.

What Ingredients Do I Use?
I use mostly supermarket own brands. I used Golden Oreos, McVities Hobnobs and Lyle’s Golden Syrup for the base. For the cheesecake I used Dr Oetkers Vanilla Extract, Lee’s Tablet and Silver Spoon Icing Sugar. Baking can be expensive and especially just now you may be finding it hard to get your hands on ingredients so it doesn’t need to be branded as long as you have the ingredients.
If you don’t live in the UK then some of these products may be slightly different. For example, in the US I think Icing Sugar is known as Confectioner’s Sugar and Double Cream is called Heavy Cream.
Alternatives
To make the biscuit base you can use any kind of biscuit you want. If you would prefer to use all Golden Oreos or a biscuit with chocolate or a filling then you will need to reduce the butter to 60g and use 1tbsp of Golden Syrup. You could alternatively use any plain biscuit you want, like a digestive.
You also don’t need to make this tablet at all, you could use any of your favourite chocolate or sweets.

Ingredients
For the Base
- 100g Hobnobs
- 100g Golden Oreos
- 70g Unsalted Butter Melted
- 2 tbsp Golden Syrup
For the Cheesecake
- 300 g Tablet
- 400 g Soft Cheese
- 150 g Icing Sugar
- 300 ml Double Cream
- 1 tsp Vanilla Extract
For the Decoration
- 120 g Tablet (optional)
- 250 ml Double Cream
- 2 tbsp Icing Sugar (optional)
Instructions
To Make the Base
- Put the butter and golden syrup in a heat proof bowl and melt in the microwave. I melt in 20 second bursts and stir in between to ensure the butter has completely melted. Leave to one side.
- In a food processor blitz your biscuits to a crumb. Add the butter and pulse for 20-30 seconds until the butter is incorporated and the biscuits now resemble wet sand.
- Pour the mixture into your cake tin and press down with the back of a spoon, until the entire base is covered by the biscuit and it nice and level.
- Leave to one side.
To Make the Cheesecake
- Cut your tablet up roughly into 1cm x 1cm squares and leave to one side.
- In a bowl mix together the soft cheese and icing sugar, until it is nice and thick.
- Pour in the remaining double cream and vanilla, while mixing on a slow speed. The mixture should be thick and holds its shape. To test it hold the bowl upside down, if it doesn't fall out its ready.
- Finally, fold through your chunks of Tablet.
- Pour the mixture into the cake tin and smooth. Put the mixture in the fridge for overnight (or at least 8 hours).
To Decorate
- Cut your Tablet into chunks and leave to one side.
- Remove the cheesecake from your cake tin.
- Whip the double cream until it is thick. If you would like to sweeten the cream add a tablespoon of icing sugar.
- Pipe the mixture onto the top of the cheesecake and decorate using the left over Tablet.
