This Party Ring Loaf Cake has a vanilla sponge, coloured vanilla buttercream and is topped with a white chocolate drizzle and some Mini Party Rings.  

I have been trying to decide which recipe we should kick 2023 off with and it has been such a hard choice there are just so many recipes I am excited about this year. 

But I finally settled on this Party Ring Loaf Cake, because just look at it. It is bright, colourful, fun and Party Rings are a top-tier snack.

Loaf Tin

Line your loaf tin with baking parchment or loaf liners. It makes it so much easier to get the loaf cake out when it is baked.  

I love baking loaf cakes, and although they seem to take forrrever in the oven (well 50-55 minutes) it is super quick to mix up the ingredients and decorate them at the end.  

In this recipe, I used a 2lb loaf tin. Annoyingly there doesn’t seem to be a standard size of loaf tin, you can get them in lots of different sizes. I used this one.

Just remember, when you are baking this recipe, only fill the loaf tin two-thirds full. All cakes rise, and this one is no different, if you fill it to the top it will overflow in the oven.  

If you find, your loaf tin is smaller and you have extra batter left over, you could bake this into cupcakes. Just split the remaining mixture between some cupcake cases and bake in the oven for 15-20 minutes. 

Party Ring Loaf Cake  

I wanted to keep this recipe quite simple and make it all about the Party Ring decoration. I went with a Vanilla loaf cake as I used the original party rings and not the newer chocolate versions you can get.  

Cream together the butter and sugar until it is combined, paler in colour and fluffy. For this recipe, you can use either unsalted butter or a baking spread like Stork or a supermarket’s own brand. All work perfectly in the cake.  

All the ingredients in this cake can be either branded or unbranded, and both work perfectly. I have used both branded and unbranded in previous recipes, and to be honest, haven’t noticed a great deal of difference in the end result.

When you are mixing the ingredients be careful not to overbeat. If you are using a stand mixer it can be so easy to put the ingredients in and get on with other things while it is mixing but just keep an eye on it.  

Overbeating the mixture can cause a few problems when the cake is baked. It could cause it to sink in the middle or be dense.  

The cake mixture should come together and be smooth. It should only take a few minutes in a stand mixer or using a hand whisk. If you are using a wooden spoon, it might take slightly longer.

Baking  

There are a few different ways to tell if your loaf cake is ready. The first indicator that it is baked is that it will be golden brown in colour.  

Another way to test it is by using a cake tester. Test the thickest part of the cake, if the tester comes out clean the cake is ready. If there is still batter on the cake pop it back into the oven for 4-5 minutes and repeat until the tester comes out clean.  

The cake needs to cool for around 15-20 minutes in the tin before it is moved onto a wire rack to cool fully.

Buttercream  

To make the buttercream beat together the butter and icing sugar until it is pale in colour and creamy.  

Unlike when you are mixing your cake ingredients together, with the buttercream it is more beneficial to leave it to beat for longer.  

The longer you mix the buttercream the paler in colour it should become. I left mine to whisk for around 5-10 minutes and it should be a lot paler, almost white, than when you started.  

If the buttercream is too thick, add a tablespoon of milk or boiling water to the mixture and beat again.  

Split the buttercream equally between four bowls. I coloured the buttercream to match the colours of the Party Rings – white, yellow, pink and purple.  

When you add the food colouring to the individual bowls, add a little at a time and gradually build the colour up. If you add too much, to begin with, there isn’t really anything you can do to lighten it again.  

Pipe the buttercream onto the top of your cake. I decided rather than mixing the buttercream, I would pipe it on individually.  

Chocolate Drizzle  

I do love a chocolate drizzle so of course, that is what I used to recreate the lines on the Party Rings onto my cake.  

I melted white chocolate and then split it into two bowls. One I left as is the other I added pink food colouring too.  

The White chocolate I drizzled over the pink and purple buttercream sections and the pink I drizzled over the white and yellow buttercream sections so that they matched Party Rings.  

Finally, I finished with some Party Ring decorations.

Alternatives 

If you want to make this loaf cake chocolate, just remove 30g of self-raising flour and add 30g of cocoa powder. You will also need to add in 25ml of whole milk. For the buttercream remove 30g of the icing sugar and replace it with cocoa powder.

Ingredients

For the Loaf Cake

  • 200 g Unsalted Butter or Stork
  • 200 g Caster Sugar
  • 200 g Self-Raising Flour
  • 4 Large Eggs
  • 1 tsp Baking Powder
  • 1 tsp Vanilla Extract

For the Buttercream

  • 400 g Icing Sugar
  • 200 g Unsalted Butter
  • 3-4 tbsp Whole Milk or Boiling Water

For the Decoration

  • 100 g White Chocolate
  • Party Rings

Instructions

To Make the Loaf Cake

  • Preheat the oven to 180C (160C Fan) and line a loaf tin with baking parchment. Leave to one side.
  • In a bowl cream together the butter and sugar until pale and fluffy.
  • Add in the remaining​ ingredients and mix until completely combined.
  • Pour the mixture into your loaf tin and bake in the oven for 50-55 minutes.
  • Leave to cool for 15-20 minutes before transferring onto a wire rack to cool.

To Make the Buttercream and Decorate

  • Add the butter and icing sugar to a large bowl and mix until completely combined.
  • If the mixture is too thick add a teaspoon of milk and mix again. Repeat until the buttercream is the desired consistency.
  • Split the mixture between four bowls. Leave one bowl to the side.
  • To the remaining three bowls add the pink, purple and yellow food colouring a little at a time. Mix in between each addition and add more food colouring if needed.
  • Add each coloured buttercream into four piping bags with your favourite piping tip.
  • Pipe the buttercream onto the top of the cake, I did four horizontal rows of pink, then yellow, purple and finally white.
  • Add the white chocolate into a large heatproof bowl and melt in the microwave on 20-second bursts. Stir in between each burst until the chocolate is completely melted.
  • Split the chocolate evenly between two bowls. Leave one bowl as it is and add a little pink food colouring to the other. Again a little at a time, mixing in between each addition until you reach the desired colour.
  • Add both chocolate to separate piping bags and drizzle over the top of the loaf cake. I drizzled the white chocolate over the pink and purple sections and the pink chocolate over the yellow and white sections.
  • Finish by adding some Mini Party Rings to the top.

Notes

  • This loaf cake will last 3-4 days in an airtight container.
