Jammie Dodgers 

Jammie Dodgers are an absolute classic biscuit. If you haven’t come across them before, it is two vanilla biscuits traditionally sandwiched together with raspberry jam. 

Now there are so many different flavours of Jammie Dodgers, like Apple and Blackcurrant but I decided to go with the traditional ones for this recipe, they are just iconic. 

Cake Tin

Whenever I am making a traybake I always try and use a 9″ x 9″ square cake tin. When I want a lovely and thick slice of blondie I find that for the amount of blondie batter I have fit’s in this sized tin perfectly. 

You can use a different-sized tin if you prefer but you may need to adjust the recipe quantities and baking time to suit the size of your tin. 

Jammie Dodger Blondies 

Although blondies have a similar texture to brownies, they are made completely different. 

Blondies are made using light brown sugar beat together with unsalted butter.

I would recommend unsalted butter rather than a baking spread as I just find that the baking spread can make them quite greasy. 

Light brown sugar is essential. This helps give the blondie its delicious fudgy texture and its it a slight hint of caramel flavour. 

Unlike with brownies you don’t need to be as gentle with the blondie mixture. Everything can be mixed together using a stand mixer or a hand mixer. 

Raspberry Jam 

Once my blondie mixture was ready, I poured it into my cake tin and swirled through raspberry jam. 

I used seedless raspberry jam in this blondie recipe because I used raspberry Jammie Dodgers but you can use any flavour of jam you fancy. If you are using a different flavoured Jammie Dodger like Apple and Blackcurrant you could use a Blackcurrant Jam. Just use the same quantity stated in the recipe below to ensure that the blondies turn out perfect. 

I added spoonful’s of jam randomly over the top of the blondie mixture and swirled it through the mixture using a skewer.  

Baking

Baking the blondies is the part that a lot of people are nervous about. So, I have included some tips and tricks to ensure that they turn out perfect. 

All ovens are different, and some ovens may take longer to bake the blondies and some may take less time to bake. If you know your oven, then this shouldn’t be a problem. However, If you are a bit unsure keep an eye on the blondies. Remember don’t open the oven door, or this will cause them to sink in the middle. 

If you are unsure if your oven is running at the correct temperature, I would recommend buying an oven thermometer. Even though you are preheating your oven to 180C it could actually be running at 200C or 160C which will affect the bake time for these blondies. 

Blondies can be difficult to tell when they are baked. When you remove them from the oven they should have a slight wobble in the centre if you gently shake your cake tin. 

I wouldn’t recommend testing the inside of the blondies with a cake skewer. If you use a cake skewer and bake until the skewer comes out clean then your blondies will be overbaked. You want them to have a soft centre so if you insert a skewer into them it will come out with blondie batter on. 

Rest the blondies in the tin for 15-20 minutes to cool slightly before moving them to a wire rack to cool fully. 

You can also pop them into the fridge to firm up.  This will give you a lovely firm blondie with a deliciously soft and fudgy centre. 

Alternatives

I used the classic raspberry Jammie Dodger but you can use any flavour you want. 

I also used Raspberry Jam and swirled it though the blondie batter but again you can use any flavour you want. 

Add extra Jammie Dodgers by crushing them up and folding them through the blondie batter when you add your chocolate chips. I recommend using 150g of Jammie Dodgers.

Ingredients

To Make the Raspberry Blondies

  • 175 g Unsalted Butter
  • 175 g Light Brown Sugar
  • 50 g Granulated Sugar
  • 3 Large Eggs
  • 200 g Plain Flour
  • 200 g White Chocolate Chips
  • 150 g Raspberry Jam
  • 16 Jammie Dodgers

Instructions

To Make the Jammie Dodger Blondies

  • Preheat the oven to 180C (160CFan) and line a 9-inch square cake tin with baking parchment. Leave to one side.
  • In a bowl cream together the butter and both sugars until lovely and light in colour.
  • Add in the eggs, plain flour and chocolate chips. Mix again until all the ingredients are combined fully.
  • Pour the mixture into your prepared tin and spread until smooth and level.
  • Add blobs of the raspberry jam randomly to the top of your blondies. Swirl the jam through the blondie mixture.
  • Add the Jammie Dodgers to the top of the blondie mixture.
  • Bake in the oven for 25-30 minutes, until they are golden in colour and ever so slightly wobble.
  • Remove from the oven and leave to cool in the tin for 15-20 minutes before transferring to a wire rack to cool fully.
  • Cut into individual portions and enjoy!

Notes

  • These Jammie Dodger Blondies will last around 5 days in an airtight container.
