No-Bake Mint Aero Cheesecake

This Mint Aero Cheesecake has a buttery biscuit base, chocolate and peppermint marbled cheesecake filled with Mint Aero bubbles and Mint Aero Mini Eggs. It is topped with some whipped cream, and more Mint Aero Treats.  

I have had this idea for a recipe for a while and I wasn’t sure how the marbling effect would work with cheesecake but I am so pleased with how it has turned out. I mean how delicious does this look. 

Reasons to Love This Mint Aero Cheesecake  

No-Bake – the beauty of this cheesecake is that it is no-bake! Once you have whipped it together just pop it into the fridge overnight or for a minimum of 4 hours.  

Mint Aero – I can’t believe it has taken me this long to make a Mint Aero recipe! I hope this one doesn’t disappoint.  

Perfect dessert – This is such a great Easter dessert as you can do the bulk of the work the day before. Then on the day all you need to do is remove it from the tin and decorate the top! The perfect Easter dessert.  

To make the Cheesecake Base  

This Mint Aero Cheesecake is made similarly to my No-Bake Summer Berry Cheesecake and my No-Bake Galaxy Caramel Cheesecake 

To make the base I used Hobnobs, but you could use any plain biscuit you fancy. 

Pop them into a food processor and blitz until they are a fine crumb. If you don’t have a food processor, don’t worry, pop the biscuits into a food-safe bag and bash them with a rolling pin until they resemble a fine crumb.

Next, add the butter and blitz again until the crumbs resemble wet sand. Or add your biscuits and butter into a large bowl and mix until they resemble wet sand. 

Pour the mixture into your tin and press it down either using your hands or the back of a spoon. 

For this recipe, I used an 8” Round Springform Tin just because I find it easier to get the cheesecake out. I also don’t line the tin either, as I just find it is quite messy and pretty impossible to get the paper off the bottom of the cheesecake. 

Once you have pressed the biscuit into the bottom of the cake tin leave it to one side or pop it into the fridge. 

Mint Aero Cheesecake  

So, unlike other cheesecakes on my blog, this one is slightly different. I decided to make it into two different flavours; peppermint and chocolate and marble them together. Kind of similar to what I did with these Millionaire Muffins.  

To start with mix together the cream cheese and icing sugar together, until it starts to thicken. Then add in the double cream while whisking on a low speed. Once you have added all of the double cream turn your mixer up to a medium speed.  

You want to mix the cheesecake mixture until it is thick and holds its shape. A good way to tell if the cheesecake is ready is to scoop some up using a spoon and turn the spoon upside down. If the mixture falls off it needs to be mixed for a little while longer.  

Once the mixture is thick and creamy, add in the peppermint extract and a little green food colouring. Fold these through until the mixture reaches the desired colour.  

I used this food colouring and you only need to use a teeny tiny amount. Add in half of the mint aero chocolates and fold these through too.  

Leave this cheesecake mixture to one side.  

In a separate bowl, you want to repeat all the steps, add in the cream cheese, icing sugar and then the double cream. Again you want it to be lovely and thick and creamy.  

The only difference with this part of the cheesecake is that you will add the melted chocolate.  

Now to marble the two together. I found the easiest way to do this was to add a tablespoon of the green mint cheesecake and then the chocolate cheesecake and alternate. Stopping intermittently to smooth the cheesecake down.  

Once all the cheesecake is in the tin smooth the top and pop it into the fridge to set.  

How Long Will My Cheesecake Take to Set? 

I would recommend leaving your cheesecake overnight to set. If you need to remove it sooner, I would recommend a minimum of 4 hours but you might find that it is still a little bit soft.  

My Cheesecake Hasn’t Set!  

If your cheesecake hasn’t set it could be because of a few different things. One of the main reasons that your cheesecake hasn’t set is not using full-fat ingredients.  

It could also be because the cheesecake is under whipped or overwhipped. When you are mixing your cheesecake you need to keep an eye on it. You will start to see it thickening up. You should be able to hold the mixing bowl upside down and the cheesecake mixture won’t fall out. Similar to what you would do when making meringues.

Decorating the Cheesecake  

Once your cheesecake has set, remove it from your cake tin and pop it onto your serving plate. If there are little bumps and scrapes along the side using a knife just go around and gently smooth them out.  

I went for super easy decoration and whipped up some double cream. I then decorated with Mint Aero Mini Eggs and Mint Aero Bubbles!  

Alternatives  

You could make this cheesecake all chocolate and add in the Chocolate Aero Mini Eggs instead.  

If you wanted a chocolate base, just use the same amount of chocolate digestives but reduce the butter down to 100g

Ingredients

For the Biscuit Base

  • 125 g Unsalted Butter (melted)
  • 350 g Hobnobs or Digestives

For the Cheesecake

  • 800 g Soft Cheese
  • 150 g Icing Sugar
  • 400 ml Double Cream
  • 1 tsp Peppermint Extract
  • Green Food Colouring
  • 100 g Milk Chocolate (melted)
  • 100 g Mint Aero Bubbles
  • 70 g Mint Aero Mini Eggs

To Decorate

  • 300 ml Double Cream
  • 1 tsp Icing Sugar (optional)
  • Mint Aero Bubbles
  • Mint Aero Mini Eggs

Instructions

To Make the Biscuit Base

  • In a food processor blitz your biscuits to a crumb. Add the butter and pulse for 20-30 seconds until the butter is incorporated and the biscuits now resemble wet sand. 
  • Pour the mixture into your cake tin and press down with the back of a spoon, until the entire base is covered by the biscuit and it nice and level. 
  • Leave to one side. 

To Make the Cheesecake

  • In a bowl mix together half the soft cheese and half the icing sugar, until it is nice and thick. 
  • Pour in half the double cream, while mixing on a slow speed. The mixture should be thick and holds its shape. To test it hold the bowl upside down, if it doesn't fallout its ready. 
  • Add the Peppermint Extract and fold through. Fold through half of the Mint Aero Bubbles and Aero Mini Eggs.  
  • Add in a small amount of green food colouring and mix through. Add more a little at a time mixing in between each addition until you reach the desired colour. Leave to one side.  
  • Melt the chocolate in a heatproof bowl in the microwave on 20 second bursts. Stirring in between each burst until completely melted. Leave to one side.  
  • In a separate bowl add the remaining soft cheese and icing sugar and mix until it is nice and thick. Add in the melted chocolate and mix until completely combined.  
  • Pour in the remaining double cream, while mixing on a slow speed. The mixture should be thick and holds its shape. Fold through the remaining Aero Bubbles and Mini Eggs until evenly distributed.  
  • Add both of the cheesecake mixtures to your cake tin. I added alternative spoonful's before smoothing the top.  
  • Put the cheesecake into the fridge overnight to set.  

To Decorate

  • Remove the cheesecake from your cake tin. 
  • Whip the double cream until it is thick. If you would like to sweeten the cream add a tablespoon of icing sugar. 
  • Pipe the double cream onto the top of the cheesecake and decorate using the left-over Aero's.
