This Blood Spatter Millionaire Shortbread has a homemade shortbread base, red homemade caramel and is topped with white chocolate and “blood” spatters.  

Millionaire shortbread is one of my favourite things to make. It is just so blooming lovely, so I had to make a Halloween-themed one.  

I had a few different ideas for this millionaire shortbread I thought about adding some chocolate ghosts and colouring the shortbread with some Halloween-themed colours, but I am so glad I went with the blood spatter. It is super gory and perfect for Halloween.

How To Make the Shortbread Base 

This shortbread base is soft, crumbly and utterly delicious. It is made using only three ingredients, flour, sugar and butter. Three common ingredients you likely already have are all it takes to make a delicious buttery shortbread base.  

I use a spring form tin when making millionaire shortbread, lined with baking parchment. Just remember and line the bottom and sides. It helps when you are trying to get the shortbread out of the tin. Lining the sides stops the caramel from sticking to the tin and pulling apart when you try and take it out.  

How to make the Caramel  

Please, please, please I am begging you to make your own caramel. Don’t use a shop-bought caramel it is far too sweet and doesn’t set so it will just splurge out the sides when you try and cut it.  

To make the caramel you only need four ingredients. Add them all to a saucepan and heat on a low heat. You need the butter to melt completely and the sugar to dissolve without the mixture boiling.  

When you are making caramel, you need to stir it constantly. If you leave it even for a few minutes you risk, it burning or catching on the bottom or sides of the pot. I find the best utensil to use for stirring the caramel is a spatula. It makes it so much easier to scrape around the side of the pot.

The caramel will start out quite runny and pale in colour. Once the butter has melted and the sugar has dissolved you can turn the heat up to high/medium and continue to mix. The caramel will start to thicken and deepen in colour.  

It normally takes around 7-9 minutes for the caramel to be ready, you will know it is ready because when you are stirring it it will start to feel thicker and gloopier. You should also notice it starts pulling away from the sides of the pot.  

Once you remove it from the heat add in some red food colouring. I have found the best one is Red Extra by Sugarflair but Red by Pro Gel will also give you a really good red colour.  

Pour the mixture over your shortbread base and leave it in the fridge to set.

Chocolate Topping and Blood Spatter

So far this Millionaire Shortbread I decided to use white chocolate as it shows the red “blood” spatters better.  

Melt the white chocolate in the microwave. Remember to stir it every 20 seconds or so to ensure it doesn’t burn, pour it over the top of the caramel and pop it back into the fridge to set.  

Once your chocolate has set, mix the vodka with a little red food colouring and using a food paintbrush flick or drop the mixture over the top of the chocolate. You could also get creative by painting your hands with red food colouring and pressing them onto the chocolate to create hand prints.  

You can be as creative as you want with the spatters.  

Pop it back into the fridge to set. As the spatters dry the vodka will evaporate leaving behind the red spatters. Meaning these are still safe for children to eat.

Alternatives  

You could make the caramel any colour you fancy, you could also a different colour for the spatter. Check out my Slime Tart for some green spatter ideas.  

If you want to make the base chocolate remove 25g of plain flour and replace it with 25g of cocoa powder.

Ingredients

For the Shortbread

  • 100 g Caster Sugar
  • 200 g Unsalted Butter or Stork
  • 300 g Plain Flour

For the Caramel

  • 397 g Condensed Milk (1 tin)
  • 50 g Caster Sugar
  • 75 g Golden Syrup
  • 225 g Unsalted Butter
  • Red Food Colouring

For the Chocolate Topping

  • 400 g White Chocolate
  • 1/2 tsbp Vodka
  • Red Food Colouring

Instructions

To Make the Shortbread

  • Line a 9” square cake tin with non-stick baking paper. Preheat the oven to 180C (160C Fan).
  • Add the butter and sugar together and mix until it becomes light and fluffy.
  • Add in the flour and mix until a dough is formed.
  • Press the dough into the bottom of your lined tin until it is flat and even.
  • Bake for 20-25 minutes or until golden.
  • Remove from the oven and leave to one side.

To Make the Caramel

  • To make the caramel put the condensed milk, sugar, golden syrup and butter into a large pan over a low heat.
  • Stir continually until the sugar has dissolved and the butter has melted. Turn the heat up to medium and boil until the caramel has thickened and darkened in colour. Stir continuously to ensure the caramel doesn’t burn.
  • It should take between 7-9 minutes until the caramel is nice and thick. Remove from the heat and add in the red food colouring a little at a time. Mixing until you get the desired colour.
  • Pour it over the top of your shortbread biscuit and leave it to cool. Put it in the fridge until the caramel has cooled and set.

To Decorate

  • Add the chocolate to a heatproof bowl and melt in 20-second bursts stirring in between until it is smooth and completely melted.
  • Pour the Chocolate over the top of the Caramel and smooth.
  • Put the millionaire shortbread back into the fridge until the chocolate has set (approx 1-2 hours)
  • Once the chocolate has set remove the shortbread from the fridge. In a bowl add the vodka and food colouring.
  • Using a food -safe brush flick the red mixture over the top of the chocolate to create a spatter effect.
  • Put the millionaire shortbread back into the fridge until the spatter has set.
  • Remove, cut into individual portions and enjoy!

Notes

  • This Millionaire Shortbread should last 1 ]week if stored in an airtight container. 
  • The vodka will evaporate as it drys leaving behind the red spatters meaning this is still safe for children to eat.
