This Mint Aero Rocky Road is packed full of marshmallows, biscuits and Mint Aero’s. It is quick, easy and utterly delicious.  

I love a Rocky Road recipe; it is a recipe that is super quick and easy to make. This Mint Aero Rocky Road only has four ingredients! Yip, that’s right only four ingredients meaning it is also quite inexpensive to make.

Square Tin 

So, in previous Rocky Road recipes, I have used a few different-sized tins. In this recipe I used my 8” square cake tin. To be honest, you could also use a 9” square cake tin or even a brownie tin to make this Rocky Road.  

Using the 8” square tin means that you get a lovely big, chunky piece of Rocky Road, but obviously, if you prefer it thinner then using a bigger tin will get you this result.  

My square tin doesn’t have a loose bottom so when I line it with baking parchment (I line both the bottom and the sides) I always make sure that the baking parchment is taller around the sides compared with the sides of the tin. This way I can pull the Rocky Road out of the tin using the baking parchment. It just makes it a little bit easier.

Rocky Road is such a budget-friendly recipe and pretty much can always be made for under £5, especially this recipe.

The main cost in this recipe is the Mint Aero’s. All the other ingredients can either be branded or unbranded depending on your budget.  

For example, this recipe will work perfectly well with Cadbury’s chocolate, but it will also be delicious using a supermarket’s own brand of 36p chocolate.  

The same can be said for the biscuits. I used digestives, you can either buy a branded biscuit like Mcvitties or you can use a supermarket’s own brand which costs around 50p for 400g.

Mint Aero Rocky Road 

This Mint Aero Rocky Road has four ingredients: 

Milk Chocolate – of course! The main ingredient is chocolate. I used milk chocolate but dark, white or a combination of all three will work perfectly in this recipe.  

Biscuits – I always use a plain digestive biscuit. It just works so well in a Rocky Road recipe, and it doesn’t take away from the mint aeros. If you wanted though, you could use any other type of biscuit you fancy.  

Marshmallows – You can’t have a rocky road without marshmallows. I use the mini ones that you get in the baking aisle, normally they are pink and white in colour. I would recommend using the mini ones as they are the perfect size for Rocky Road, meaning you get lots of marshmallows in every bite. Using the larger size ones that you can buy in the sweet aisle means that you will get a bigger chunk of marshmallow in your rocky road but there will be less.  

Mint Aero’s – Of course, you couldn’t have Mint Aero Rocky Road without Mint Aeros. I used a combination of Mint Aero bars and Mint Aero Bubbles. You can use all of one or a mixture of the two.

Alternatives 

I didn’t add any peppermint extract to the chocolate mixture as I thought this rocky road was minty enough just with the Mint Aero. However, if you want to you can add 1tsp of Peppermint Extract to the melted chocolate.

Mint Aero Rocky Road

Ingredients

For the Mint Aero Rocky Road

  • 100 g Digestive Biscuits
  • 100 g Marshmallows
  • 200 g Mint Aero
  • 500 g Milk Chocolate

Instructions

To Make the Mint Aero Rocky Road

  • Line an 8” square cake tin with parchment paper and leave it to one side.
  • Crush the biscuits and add them to a large bowl with 80g of Marshmallows.
  • Add the Mint Aero leaving a handful for decoration.
  • Add the chocolate to a separate heatproof bowl and melt in the microwave on 20-second bursts stirring in between until the chocolate has completely melted and is smooth.
  • Pour the chocolate on top of the biscuits, Mint Aero and marshmallows. Stir until they are completely coated in chocolate.
  • Pour the mixture into your pre-prepared tin and smooth.
  • Finish by adding the remaining marshmallows, Mint Aero, and biscuits to the top of the rocky road.
  • Put the Rocky Road in the fridge for 4 hours or until the chocolate has set.
  • Remove from the fridge and cut into individual portions.

Notes

  • This Mint Aero Rocky Road can be stored either in the fridge or in an airtight container and it will last up to 1 week.
