Caramelised Apples 

Apples in a cake are just pure heaven, aren’t they? But coating them in cinnamon and brown sugar before adding them to the cakes takes them to another level! Is there another level of pure heaven, I have no idea but trust me, the caramelised apples are incredible.  

I added chunks of apples into the cake batter and also cut some apple slices and added them to the top of the cake batter before baking.

Spices  

This Spiced Apple Cake has two main focuses, the apples and of course the spices. In this recipe used ground cinnamon and ground mixed spice.  

The mixed spice gives the cake a deliciously warm and spicy flavour. Mixed Spice does include cinnamon, but I added in another teaspoon of sweetened ground cinnamon, (you can use normal ground cinnamon too.) I wanted the cake to be deliciously warm and spicy but I also wanted it to be ever so slightly sweet too. 

Cake  

Unlike all of the other cake recipes on my blog, this cake is a single sponge cake. Whenever you are making a cake you should always start by creaming together the butter and sugar. I used demerara sugar in the cake and light brown sugar on the apples.  

I added the chunks of apple to the cake mixture and folded them through just to ensure that they were evenly distributed. Before pouring the mixture into my 8” cake tins. 

I then added the slices around the top of the cake before baking. 

Baking 

The cake needs to bake in the oven for 40-50 minutes. There are a few different ways to tell that the cake is baked. The first way is by the colour of the cake, it should be a lovely golden brown colour.  

The second way to tell if the cake is baked is to gently press down on the top of the cake. If it springs back to its original shape when you remove your finger then it is ready, if you end up with a slight dent in the top of the cake then pop it back into the oven for another 5 minutes and repeat.

Serving Suggestions 

This cake is utterly delicious by itself, but you can also serve it warm or cold. You could serve it with some cream, ice cream or custard. 

Alternatives 

I used sweetened ground cinnamon in this recipe but ground cinnamon will work perfectly.

Ingredients

To Make the Spiced Apple Cake

  • 4 Large Cooking Apples
  • 4 tbsp Brown Sugar
  • 1 tsp Ground Cinnamon
  • 200 g Unsalted Butter or Baking Spread
  • 200 g Demerara Sugar
  • 200 g Self-Raising Flour
  • 4 Large Eggs
  • 1 tsp Ground Cinnamon
  • 2 tsp Mixed Spice
  • 1 tsp Baking Powder

Instructions

To Make the Spiced Apple Cake

  • Preheat the oven to 180C (160C Fan). Line an 8” cake tin with greaseproof paper and leave to one side.
  • Peel and core 3 of the large apples. Cut into 1cm chunks and place into a large bowl.
  • Add 2tbsp of light brown sugar and cinnamon to the bowl and mix until the apples are coated. Leave to one side.
  • In a large bowl, cream together the butter and sugar until light, pale and fluffy.
  • Add in the flour, eggs, cinnamon, mixed spice and baking powder and mix until all the ingredients are completely combined.
  • Fold through the apples until they are evenly distributed.
  • Pour the mixture into your cake tin.
  • Peel and core your fourth apple. Cut into slices and place onto the top of your cake mixture. Sprinkle over the final 2 tbsp of light brown sugar and bake in the oven for 45-50 minutes.
  • The cake is baked when it is golden brown on top. Leave the cake to cool in the cake tin for 15-20 minutes before removing and leaving to cool fully on a wire rack.

Notes

  • This Spiced Apple Cake will last for up to 3 days in an airtight container.
