This Millionaires Loaf Cake is super indulgent, from a caramel cake to chocolate buttercream a caramel drizzle and decorated with millionaire shortbread bites.

Millionaires 

This Millionaires Loaf Cake is baked on the classic millionaire’s shortbread. 

Millionaires shortbread is a traybake made up of a shortbread base, a set caramel and topped with a chocolate layer. 

Loaf Cake 

I have tried to keep the flavours of this loaf cake as close to the original millionaire’s shortbread as possible.

I went with a light brown sugar sponge for this cake. The light brown sugar gives the loaf cake a lovely golden colour and caramelly flavour. Perfect for replicating the caramel flavour in millionaire shortbread.

Caster sugar will also work perfectly in this recipe but will give you a vanilla-flavoured cake rather than caramel.

You can use either unsalted butter or a baking spread like Stork for this recipe both work perfectly well. 

Loaf Cake Tin

I used a 2lb loaf tin for this recipe. Loaf tins are quite widely available and you can get them online or in supermarkets relatively inexpensively. 

There isn’t a standard size of loaf tin and you might find that a loaf tin you get in one shop is a different size from one you get in another shop. This shouldn’t really be a problem though and shouldn’t really affect the baking time. 

Baking and Cooling 

The millionaire’s loaf cake does need to be baked low and slow to ensure that you don’t end up with burnt cake on the outside and raw cake on the inside. 

The more you bake the more you get to know your oven, no two are the same. For example, this loaf cake bakes in 50 minutes in my oven however, someone else who has followed the recipe exactly and used their oven might find that it takes an hour, and another person’s oven may only take 45 minutes. 

Keep an eye on the cake while it bakes, but remember and don’t open the oven door. This will cause the loaf cake to sink in the centre. 

Once the cake is baked, it needs to cool fully before you can decorate it. 

When you first take the cake out of the oven it will be quite soft. I recommend leaving it to cool for 15-20 minutes in the tin before moving it to a cooling rack to cool fully. 

Chocolate Buttercream 

Whenever I make a cake I always decorate it with American buttercream. I absolutely love it, it is sweet and firm and compliments the cake so well. 

I went with a chocolate buttercream for this cake, to replicate the chocolate topping on millionaires shortbread. 

American buttercream is literally only three main ingredients, icing sugar, unsalted butter and cocoa powder. 

You must use unsalted butter whenever you make American buttercream. Any other type of butter or margarine will be too soft and you risk ending up with a buttercream soup. 

You can add a teaspoon of vanilla to the buttercream, this is completely optional though. 

If you find that the buttercream is too thick to pipe onto the cupcakes add a tablespoon of milk to the mixture and beat again. Repeat until the buttercream is the desired consistency. 

Caramel Drizzle and Decoration

I decorated the top of this cake with a caramel drizzle. For the best results, you want to use a thick, gloopy caramel. I like carnations caramel. 

I soften the caramel in the microwave for 10-20 seconds to make it easier to drizzle and put it in a piping bag. You could drizzle it over using a spoon though. 

To finish off the decoration I used some mini millionaire shortbread bites. 

Alternatives

You could crush up a piece of shortbread and sprinkle it over the top of the cake. 

If you prefer, you can use caster sugar in the cake instead of light brown sugar but you won’t get a caramel flavour.

Ingredients

For the Millionaires Loaf Cake

  • 200 g Unsalted Butter or Stork
  • 200 g Light Brown Sugar
  • 200 g Self-Raising Flour
  • 4 Large Eggs
  • 1 tsp Baking Powder
  • 1 tsp Vanilla Extract

For the Chocolate Buttercream

  • 200 g Unsalted Butter
  • 350 g Icing Sugar
  • 50 g Cocoa Powder
  • 3-4 tbsp Whole Milk (optional)

For the Decoration

  • 150 g Caramel
  • Mini Millionaire Bites

Instructions

To Make the Millionaires Loaf

  • Preheat the oven to 180C (160C Fan) and line a loaf tin with baking parchment. Leave to one side.
  • In a bowl cream together the butter and sugar until pale and fluffy.
  • Add in the remaining​ ingredients and mix until completely combined.
  • Pour the mixture into your loaf tin and bake in the oven for 50-55 minutes.
  • Leave to cool for 15-20 minutes before transferring onto a wire rack to cool fully.

To Make the Chocolate Buttercream

  • Beat the butter for 5-10 minutes until soft and supple.
  • Add in the icing sugar and cocoa powder and mix until all the ingredients are fully combined. If the buttercream is still too thick add in 1tbsp of milk and mix again. Repeat until the buttercream is the desired consistency.
  • Pipe the buttercream onto the top of your cooled loaf cake.
  • Soften the caramel in the microwave for 10-20 seconds. Drizzle over the top of the cake and decorate with mini Millionaire bites.

Notes

  • This Millionaires Loaf Cake will last up for 4 days in an airtight container.
