This Snickers Rocky Road is chocolatey, caramelly and peanutty. Perfect for a Snickers Lover.

Snickers Rocky Road 

Whenever I am making a recipe like this, I always try my hardest to incorporate as many of the flavours of the chocolate bar into the Rocky Road. 

I went with a milk chocolate base, for this Snickers Rocky Road and melted it in the microwave for 20-second bursts. I stirred in between each burst to ensure the chocolate didn’t get too hot. Keep a close eye on the chocolate you don’t want it to get too hot and bloom when it cools.

Twix Rocky Road

As with all Rocky Road recipes, I added marshmallows to the chocolate but instead of adding a biscuit like a digestive, I added in peanuts instead. You can half and quarter the peanuts if you prefer but I just added them in whole. 

I also added the Snickers bars. I cut them lengthways and then horizontally to get lots of little pieces of Snickers bars.

Caramel 

I decided to add caramel to this Rocky Road too. So, similar to my Rolo Rocky Road and Twix Rocky Road, I put half the Rocky Road mixture into the square tin and added spoonfuls of caramel randomly over the top. I then added the last of the rocky road mixture on top and added some spoonfuls of caramel on top. 

I used carnations caramel for this, so that when you cut into the Snickers Rocky Road you get lots of little caramelly pockets. It does need to be a thick gloopy caramel, so Carnations Caramel is perfect. I wouldn’t recommend a thin, runny caramel sauce or it will just run out the bottom/sides.

Square Tin 

Whenever I make Rocky Road I always use an 8″ square cake tin, lined with baking parchment. This recipe paired with the 8″ tin does mean that you get a deliciously, thick slice of rocky road. 

You could use a larger tin if you prefer thinner pieces of Rocky Road.

Alternatives 

As I said above I used peanuts in this recipe rather than biscuits. You can use biscuits if you prefer just use the same weight of biscuits as peanuts and crush them up before adding them to the chocolate.

Ingredients

For the Snickers Rocky Road

  • 100 g Peanuts
  • 100 g Marshmallows
  • 200 g Snickers
  • 500 g Milk Chocolate
  • 200 g Caramel

Instructions

To Make the Snickers Rocky Road

  • Line an 8” square cake tin with parchment paper and leave it to one side.
  • Add 90g of peanuts to a bowl along with 80g of Marshmallows.
  • Cut the Snickers bars into bitesize chunks and add them to the bowl. Leave some to the side to sprinkle over the top.
  • Add the chocolate to a separate heatproof bowl and melt in the microwave on 20-second bursts stirring in between until the chocolate has completely melted and is smooth.
  • Pour the chocolate on top of the peanuts, Snickers and marshmallows. Stir until they are completely coated in chocolate.
  • Pour half the mixture into your tin, and add spoonfuls of caramel randomly over the top. So that when you bite into the rocky road you get little pockets of caramel.
  • Pour the remaining mixture over the top and again add spoonfuls of caramel randomly over the top.
  • Finish by adding the remaining marshmallows, Snickers, and peanuts to the top of the rocky road.
  • Put the Rocky Road in the fridge for 4 hours or until the chocolate has set.
  • Remove from the fridge and cut into individual portions.

Notes

  • This Snickers Rocky Road can be stored either in the fridge or in an airtight container and it will last up to 1 week.
