I am obsessed with Biscoff, it is just utterly heavenly. There are already so many Biscoff recipes on my blog including Biscoff Loaf Cake, Biscoff Truffles and Biscoff Muffins.  

Biscoff Rocky Road is a recipe I have wanted to make for a long time, it is such a quick and simple recipe I can’t believe how long it has taken me to make it.

Biscoff Rocky Road  

Rocky Road is such a simple sweet treat. It is made of just three main ingredients, chocolate, biscuits and marshmallows.  

I used milk chocolate for this recipe but white chocolate would also work perfectly. Once the milk chocolate was melted I added in the marshmallows and Biscoff biscuits.  

I crushed the Biscoff biscuits in my hands rather than in a food processor. I prefer there to be different-sized chunks of biscuits on the rocky road.

Square Tin  

There are a few different-sized tins that you can use for this rocky road recipe. I used a brownie tin, but you could also use an 8” square tin as I did for my Mint Aero Rocky Road.  

Biscoff Spread 

Once I had poured the rocky road mixture into the tin I spread over smooth Biscoff spread over the top of the mixture.  

I went with the smooth biscoff spread for the top because that is what I had in the cupboard, but it would work perfectly with the crunchy spread too.  

I then sprinkled over the remaining marshmallows and Biscoff biscuits and popped it into the fridge to set.

Alternatives 

Instead of spreading the Biscoff spread on top of the rocky road, why not spoon half the rocky road mixture into the tin and then add spoonfuls of Biscoff spread randomly over the top before adding the rest of the rocky road? You will get lots of little pockets of Biscoff spread.  

You could use white or dark chocolate instead of milk chocolate.

Biscoff Rocky Road

Ingredients

For the Biscoff Rocky Road

  • 500 g Milk Chocolate
  • 100 g Biscoff Biscuits
  • 100 g Marshmallows
  • 200 g Biscoff Spread

Instructions

To Make the Biscoff Rocky Road

  • Line a 12” x 8" tin with parchment paper and leave it to one side.
  • Add the chocolate to a heatproof bowl and melt in the microwave on 20-second bursts stirring in between until the chocolate has completely melted and is smooth.
  • Crush the biscuits and add them to the chocolate with 80g of Marshmallows.
  • Mix until the biscuits and marshmallows are completely coated in chocolate.
  • Pour the mixture into your tin and spread over the Biscoff spread.
  • Sprinkle over any leftover biscuits and marshmallows and put the Rocky Road in the fridge for 4 hours or until the chocolate has set.
  • Remove from the fridge and cut into individual portions.

Notes

  • This Biscoff Rocky Road can be stored either in the fridge or in an airtight container and it will last up to 1 week.
